TOMATO ZUCCHINI SALAD
Tomato zucchini salad is a wonderful way to use up garden fresh vegetables. One of my favorite thing about summer is all the fresh vegetables we have access too and the many fresh salads on hot days.
I think this salad is best served right away once you add the dressing or you could cut up the vegetables ahead of time and add the dressing right before serving. This recipe can be cut in half or you can double it if for a picnic or large gathering. Fresh zucchini salad is a great way to use that zucchini in the garden and I always seem to have too much of it. You can add whatever vegetables you like to this salad. Bacon or ham can also be added or you don’t have to add the meat at all. Fresh corn and radishes could would also be good. You might also like to check out our Pasta Salad Recipes for Summer.
Ingredients for fresh tomato zucchini salad.
1 cup chopped unpeeled zucchini
1 large tomato, chopped
1 cup yellow sweet pepper, chopped (I usually do a combination of yellow, green and red sweet peppers)
1/2 cup chopped, peeled cucumber
1/2 cup chopped green onion (could use regular onion or red onion)
3 to 4 slices cooked bacon, crumbled (could use ham or leave out the meat completely)
Dressing:
2 tablespoons olive oil or bacon drippings
2 teaspoons white granulated sugar
1 tablespoon apple cider vinegar
1 teaspoons dried or fresh parsleyv
1/4 teaspoon salt
1/4 teaspoon dried marjoram
1/8 teaspoon black pepper
1/2 teaspoon dried basil or can use fresh basil
Combine zucchini, tomato, pepper, cucumber and onion in a bowl. Whisk together the ingredients for the dressing and pour over the salad. Toss so dressing will get on all ingredients. Makes about 3 1/2 cups salad. Enjoy.
