Tomato Zucchini Salad

Servings: 3 cups
- 1 cup chopped unpeeled zucchini
- 1 large tomato chopped
- 1 cup yellow sweet pepper, chopped (I usually do a combination of yellow, green and red sweet peppers)
- 1/2 cup chopped, peeled cucumber
- 1/2 cup chopped green onion could use regular onion or red onion
- 3 to 4 slices cooked bacon, crumbled (could use ham or leave out the meat completely)
Dressing
- 2 tablespoons olive oil or bacon drippings
- 2 teaspoons white granulated sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoons dried or fresh parsleyv
- 1/4 teaspoon salt
- 1/4 teaspoon dried marjoram
- 1/8 teaspoon black pepper
- 1/2 teaspoon dried basil or can use fresh basil
Combine zucchini, tomato, pepper, cucumber and onion in a bowl. Whisk together the ingredients for the dressing and pour over the salad. Toss so dressing will get on all ingredients.
