Tomato Zucchini Salad

Tomato zucchini salad is a wonderful way to use up garden fresh vegetables.  This recipe makes for a stunning dish.

Ingredients

  • 1 cup chopped unpeeled zucchini
  • 1 large tomato chopped
  • 1 cup yellow sweet pepper, chopped (I usually do a combination of yellow, green and red sweet peppers)
  • 1/2 cup chopped, peeled cucumber
  • 1/2 cup chopped green onion could use regular onion or red onion
  • 3 to 4 slices cooked bacon, crumbled (could use ham or leave out the meat completely)

Dressing

  • 2 tablespoons olive oil or bacon drippings
  • 2 teaspoons white granulated sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoons dried or fresh parsleyv
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried marjoram
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon dried basil or can use fresh basil

Instructions

  • Combine zucchini, tomato, pepper, cucumber and onion in a bowl. Whisk together the ingredients for the dressing and pour over the salad. Toss so dressing will get on all ingredients.
