If you are anything like us, every summer we end up with lots of zucchini and are always looking for recipes. This is one we always come back to because it is loaded in flavor and the Italian sausage and pasta go so well together. Then you add in the tomato soup and you just have a wonderful flavor.

We love the Italian sausage in this recipe; we always buy the sweet mild kind, but if you like spicy, you can use that. You may also want to switch out the sausage for ground beef or ground turkey, which will be great too. We suggest that if you use ground turkey, you will want to add more spices, since it doesn’t have as much flavor as ground beef or Italian sausage.

Italian Zucchini Pasta Casserole

Ingredients
 

  • 1 lb of Italian Sweet Sausage
  • 2 cups of uncooked pasta
  • 3 cups of zucchini quartered
  • 1 10.75 ounce can of tomato soup
  • 1/2 cup of chopped green pepper
  • 1/2 cup chopped white onion
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of dried basil
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of dried parsley
  • 2 cups of Italian Blend shredded cheese divided

Instructions
 

  • Preheat oven to 350 degrees. Cook pasta according to directions and set aside. Brown Italian sausage, green pepper, and onion in skillet.
  • Add in zucchini, spices and tomato soup. Let simmer until zucchini is soft , about 3-4 minutes.
  • In a 2 quart casserole dish combine pasta and meat mixture and stir in one cup of cheese. Once combined top mixture with remaining cup of cheese.
  • Bake in preheated oven for 20 minutes.

  3. I will be doing this recipe with bite size pieces of chicken tenders as we are not fond of sausage. I will use 1 tbsp of fresh herbs instead of dry (at least until it frosts). I also added thinly sliced garlic instead of garlic powder. The recipe is very straightforward and easy so I think the changes will be fine.5 stars
