My family loves sloppy joes so of course this casserole is definitely a favorite. This easy dish takes no time to put together. It really does make the perfect weeknight dinner. I like to make this dish in my cast iron skillet but it can easily be made in a casserole dish. Just add our easy 4 ingredient cheddar muffins and you have a great meal. If you happen to have leftovers (it’s rare at our house) they do reheat well in the microwave.

Sloppy Joe Pasta Casserole

1 pound ground beef or ground turkey

8 ounces of small shell pasta (can use any pasta you like)

2 cups of shredded cheddar cheese

3/4 cup finely chopped onion

1 (8 ounce) can tomato sauce

1/2 cup tomato ketchup

1 tablespoon yellow mustard

1 teaspoon minced garlic

1 teaspoon Worcestershire sauce

2 tablespoons brown sugar

Cook pasta according to directions on the box. While pasta is cooking, brown ground beef and onions, drain.   Add tomato sauce, ketchup, mustard, garlic, Worcestershire sauce and brown sugar and let simmer for 5-10 minutes. Stir in pasta and one cup of cheese. Top with remainder of cheese and broil in oven for 2-3 minutes until cheese is melted. I like to top mine with a little bit of fresh basil.

Note: If making in a casserole dish, place in oven at 350 and cook until warmed through and cheese is melted.
