BUTTERSCOTCH CAKE WITH BUTTERSCOTCH FROSTING
This Butterscotch Cake makes a wonderful dessert to serve friends and family or just as a snack anytime. Cake is one of my favorite things in this world. I could eat it everyday! I love it with coffee, milk or tea. If you like butterscotch, you will love this one.
Butterscotch cake is delicious and easy to make.
1 cup brown sugar
1 stick butter or 8 tablespoons or 1/2 cup, softened
3 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 (3.4 ounce) box butterscotch instant pudding
1 1/2 cups buttermilk
1 cup butterscotch chips
1 cup nut pieces (pecans or walnuts)
Cream together sugar, butter and eggs with mixer. Add vanilla extract. Whisk together in another bowl the flour, baking powder, salt and butterscotch pudding mix. Add flour mixture along with buttermilk to creamed mixture and mix. Fold in butterscotch chips and nuts with spoon. Spray a 9 x 13 cake pan with cooking spray. Spread cake batter in pan. Bake in preheated 350 degree oven 30 to 35 minutes until center tests done. Add frosting below.
Butterscotch Frosting:
1 cup butterscotch chips
2 tablespoons butter
3 cups powdered sugar
About 5 tablespoons milk
Melt chips and butter together in microwave or on top of stove. It takes about 1 minute 25 seconds in my microwave. Add powdered sugar and a little milk while mixing with mixer. Continue mixing and adding milk until the get the frosting consistency you want. Spread over cooled cake.

could i make this cake in a sheet pan size 12×17 if so how long should i bake it for
Yes, I think you could do that fine, Pamela. I would just watch it and maybe cut the time by 10 minutes or so. Check the middle with a fork or something to see if done. Hope you enjoy the recipe.
Hiii!! This recipe looks yummy and easy to make. I’m new to baking, so I have a few questions before I got down to baking it:
1) What brand of buttermilk do you use?
2) Is it okay if I halved the recipe and made this in a 8” round pan?

I don’t use any special brand of buttermilk. Just whatever I can find at Walmart or Kroger but I do use the whole buttermilk and not the fat free. I think you could easily make half this recipe. Good luck and happy baking.
