If you have followed our site for any amount of time you know we love Mexican food. This was an experiment that turned out great and the reviews show that too. Many people love this recipe and it’s super versatile. The tortilla chips are a wonderful addition and this comes together really well.

SWAPS

This is a versatile recipe, you can switch out the taco seasoning for fajita seasoning if you prefer. You can also leave out cilantro if you are not a fan of replace it with fresh instead of the dried. We love the tortilla chips and think they bring a great texture to this recipe. Use a salsa you love for the topping.

You may have to increase the cooking time on this recipe. We find that it’s done at that time but all ovens vary and even the pan you bake it in can make a difference too.

Ingredients
 

  • 2 pounds ground beef
  • 2 teaspoons minced garlic
  • 2 teaspoons dried cilantro leaves
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • Dash hot pepper sauce or Tabasco optional
  • 1 tablespoon taco seasoning I used my recipe for homemade taco seasoning
  • 1/2 cup chopped green onion or regular onion
  • 1/2 cup chopped red or green sweet peppers
  • 1 cup frozen corn
  • 2 10 ounce cans Rotel tomatoes with green chilis (well drained)
  • 1 egg
  • 2 cups crushed tortilla chips or corn chips divided (I used tostado chips)

Topping for Mexican meatloaf:

  • 1/2 cup salsa
  • 1/2 cup crushed tortilla chips
  • 1/2 cup shredded Mexican cheese I used a Finely Shredded Fiesta Blend that is a combination of Monterey Jack, Cheddar, Queso Quesadilla and Asadero Cheese that came from Walmart

Instructions
 

  • Mix together in a large mixing bowl the ground beef with the minced garlic, cilantro, pepper, salt, hot sauce and taco seasoning.
  • Fold in the onions, peppers, corn, drained tomatoes, egg and 1 1/2 cups of the crushed tortilla chips.
  • Form into a loaf and place in baking dish (I used a 9 x 13).  Bake in preheated 350 degree oven, uncovered, for 30 minutes.  Remove and add the salsa, crushed tortilla chips and cheese to the top of the meatloaf.  Raise the oven heat to 375 and bake for 35 more minutes uncovered.  Makes 8 to 10 servings.

Notes

You could add a dollop of sour cream to cooked meatloaf slices along with more salsa when serving.

    I topped mine with red enchilada sauce instead of salsa and use shredded queso cheese. I left out the crushed tortilla chips on top, but I incorporated sliced avocados as a side5 stars

      I don’t think refried beans will bind will it. Leave the yolk out. This is the best combo of flavors I’ve tried, & I’ve been working on my own recipe for 60 odd years!!!5 stars

  4. I made this today! And it is indeed the vest tasting meatloaf ever!!!!
    I did however have to increase the cooking time,
    After 65 total minutes it only registered 134 degrees!
    I felt I needed to go 165.
    I made Mexican Rice to go with it.

  9. Can I use beef, pork and veal mix?

  10. We are on a Mexican food kick this summer and now you have provided another great option. With this much ground beef in the recipe it took closer to 85 min to get done. This is so different than traditional ML and the flavors are wonderful. Next time I’m going to try it in the smoker with light smoke and fruit wood chunks.5 stars
