Cheesy Green Chile Rice The Southern Lady Cooks

 

This dish makes the perfect side dish to tacos, burritos or enchiladas. We really enjoy the green chiles with smoked paprika. It gives this rice dish a smoky taste that my family loves. This rice reheats well and the recipe can easily be doubled or tripled. It takes no time to prepare and it’s great for any weeknight dinner.

Cheesy Green Chile Rice

4 cups of cooked white rice

2  4 ounce jars of green chiles, drained

1 cup of shredded cheddar cheese

1 1/2 cups of sour cream

1/2 teaspoon of garlic powder

1/2 teaspoon of cumin

1/2 teaspoon of chili powder

1/2 teaspoon of smoked paprika

Preheat oven to 350. Spray a 2 quart casserole dish. Mix all ingredients together, cover and bake for 30 minutes. Serves 6-8.

Ingredients

  • 4 cups of cooked white rice
  • 2 4 ounce jars of green chiles drained

  2. Do you think this would work using Minute Rice? I don’t always have good luck using regular rice for some reason.
