Cheesy Green Chile Rice The Southern Lady Cooks

 

This dish makes the perfect side dish to tacos, burritos or enchiladas. We really enjoy the green chiles with smoked paprika. It gives this rice dish a smoky taste that my family loves. This rice reheats well and the recipe can easily be doubled or tripled. It takes no time to prepare and it’s great for any weeknight dinner.

Cheesy Green Chile Rice

4 cups of cooked white rice

2  (4 ounce) jars of chopped green chiles, drained

1 cup of shredded cheddar cheese

1 1/2 cups of sour cream

1/2 teaspoon of garlic powder

1/2 teaspoon of cumin

1/2 teaspoon of chili powder

1/2 teaspoon of smoked paprika

Preheat oven to 350. Spray a 2 quart casserole dish. Mix all ingredients together, cover and bake for 30 minutes. Serves 6-8.

Ingredients

  1. I stumbled upon this recipe while perusing your site and had plans to make enchiladas and refried beans. This was such a delicious addition to our family meal! I normally don’t cook white rice & use brown to keep the carbs down but I happened to have exactly 4 cups of leftover rice to make this with. I am definitely going to try it with brown rice in the future!5 stars

    If you wanted to make this a one dish meal, do you think you could add browned ground chuck to it. If so, would you need to add more liquid?

  6. Do you think this would work using Minute Rice? I don’t always have good luck using regular rice for some reason.
