Chocolate Chip Banana BreadI think this chocolate chip banana bread is fast becoming one of my favorite banana bread recipes.  If you like chocolate and bananas, you will love this bread. It makes a great gift for family and friends. The recipe came from Pete and Sherry Coyle of Perryville, Ky.  Anytime you have leftover bananas grab this recipe for a sweet, chocolate treat!  You can easily double this recipe and take one loaf to a friend and they will love you for it. This bread is just that good! It keeps for several days in a cool spot or refrigerated and can be reheated in the microwave or oven. It is wonderful in the morning with your coffee. I usually make two loaves for my family since this bread is gone practically before it cools. Chocolate chip banana bread will quickly become a family favorite.

1 cup sugar
1/2 cup butter or margarine, softened
2 eggs, beaten
3 bananas, mashed
2 cups all-purpose flour
1 teaspoon soda
1/2 teaspoon salt
1 cup chocolate chips
1/2 cup chopped nuts, walnuts or pecans

Mix butter, sugar, eggs, and bananas with mixer.  Add remaining ingredients except chocolate chips and mix well.  Fold in chocolate chips with spoon and sprinkle nuts on top of batter.  Pour into sprayed loaf pan and cook in preheated 350 degree oven for 60 minutes. Let cool for 10 minutes before removing from pan.  Makes one large loaf of bread.

Tips on Bananas:  Always store at room temperature unless trying to slow down ripening. You can place in fridge to slow down the ripening process. The skins will turn black but bananas will be fine. Use ripe bananas in bread and in baking to add more banana flavor. Bananas ripen slower if left in a bunch. Placing bananas in a bowl with other fruit will cause them to ripen faster. To freeze, remove skins cut in 3 pieces and put in freezer bags.
