We love tuna salad sandwiches for lunch anytime, but especially in the summer. Tuna salad is always a favorite and we like to eat it with crackers or chips, too. Serve on a bed of lettuce with fresh tomatoes as a summer treat. You might also like to check out our recipe for potato salad.
Tuna salad is so versatile in that you can add what you like and make it your own.
2 (5 ounce) cans tuna in water, drained
1/4 cup celery, finely chopped
1/4 onion, finely chopped
2 tablespoons sweet pickle relish or chopped pickles
1/3 cup mayonnaise
2 eggs, boiled, peeled and chopped
1/8 teaspoon pepper
1/4 teaspoon salt
1/2 teaspoon smoked paprika (optional)
Mix all ingredients in a bowl. Chill for several hours or can serve at room temperature. Makes great sandwiches. Makes about 3 cups. Enjoy!
