❤️WHY WE LOVE THIS RECIPE

This recipe has everything we love, chocolate, cream cheese, nuts (optional) and our favorite chocolate frosting. So these cupcakes are a winner! They take a little time to put together but they are worth the effort. If you want to make something special for a birthday or a gathering, put these on your dessert table!

SWAPS

If you don’t want to spend the time to make these 100% from scratch, you can use a chocolate cake mix to save time. You could also use store bought frosting. These are quick swaps that will bring this recipe together quicker. Personally, we love the homemade version, but we know not everyone has the time for all that. Nuts are completely optional in this recipe.

DOES THE FROSTING HARDEN AT ALL?

Yes, the top of the frosting does harden a little but it’s still soft on the cupcake. It is the best frosting ever and I definitely think you should give it a try!

  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup cocoa
  • 1 cup water
  • 1/2 cup oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla flavoring

Filling Ingredients:

  • 1 (8 ounce) package cream cheese, softened
  • 1 egg
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 cup chocolate chips.

Frosting Ingredients:

  • 3 3/4 cups confectioners’ sugar
  • 3 tablespoons baking cocoa
  • 1/2 cup butter melted
  • 6 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/3 cup chopped nuts Optional

Instructions

Cake Instructions:

  • Preheat oven to 350 degrees. Combine the dry ingredients; beat in the liquid ingredients until smooth.  Fill  cupcake cups 1/2 full.   Make filling and add one heaping tablespoon of filling into center of each cupcake.
  • Bake in preheated 350 degree oven 25 – 30 minutes. Let cool before frosting.

Filling Instructions:

  • Beat cream cheese, egg, sugar and salt until smooth.  Stir in chips.

Frosting Instructions:

  • In a large bowl combine sugar, cocoa, butter, milk and vanilla.  Beat until blended.  Frost cupcakes.
  • This recipe made about 16 cupcakes, two of them were on the smaller size. So if you made them all smaller, it would probably make closer to 24.

Notes

You could make these with a chocolate cake mix and add the filling to the mix.  You can also frost with bought cake frosting. I have done them both ways. They are good without the frosting, too.
