CHOCOLATE CREAM CHEESE CUPCAKES

Chocolate cream cheese cupcakes make a wonderful gift for a friend or neighbor.

Chocolate Cream Cheese CupcakesThese cupcakes are filled with cream cheese and chocolate chips.  They are so moist and good.   Make these wonderful cupcakes whenever you are craving chocolate. Your family will love them.  You might also like our recipe for chocolate pudding cake.

Chocolate cream cheese cupcakes are great for any event or gathering.

1 1/2 cups all-purpose flour
1 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup cocoa
1 cup water
1/2 cup oil
1 Tablespoon white vinegar
1 teaspoon vanilla flavoring
Combine the dry ingredients; beat in the liquid ingredients until smooth.  Fill  cupcake cups 1/2 full.   Make filling and add one heaping tablespoon of filling into center of each cupcake. 
 
Filling:
1 (8 ounce) package cream cheese, softened        
1 egg
1/2 teaspoon salt
1/3 cup sugar
1 cup chocolate chips.
Beat cream cheese, egg, sugar and salt until smooth.  Stir in chips.
 
Bake in preheated 350 degree oven 25 – 30 minutes. Let cool before frosting.  Yield:  18 to 20 cupcakes
 
Frosting:
3 3/4 cups confectioners’ sugar
3 tablespoons baking cocoa
1/2 cup butter or margarine, melted
6 tablespoons milk
1 teaspoon vanilla extract
1/3 cup chopped nuts (Optional)
In a large bowl combine sugar, cocoa, butter, milk and vanilla.  Beat until blended.  Frost cupcakes.
 
Note:  You could make these with a chocolate cake mix and add the filling to the mix.  You can also frost with bought cake frosting. I have done them both ways. They are good without the frosting, too.
