SAUSAGE SPINACH CRUSTLESS QUICHE
This Sausage Spinach Quiche is made without a crust. Great to make on a Sunday and enjoy throughout the week. It’s super versatile too and my family loves it!

❤️WHY WE LOVE THIS RECIPE
This sausage spinach crustless quiche is a family favorite and so easy to throw together if you had a busy day or just want something quick. You can add ingredients you like or use different meats and cheeses in this quiche and make it your own. I like that I don’t have to have a crust or have to make one but you could make this in a crust if you want. It is good reheated in the microwave.
🍴KEY INGREDIENTS
- Pork sausage
- Fresh spinach
- Can chopped mushrooms, drained
- Mozzarella cheese
- Green or regular onion
- Eggs
- Milk
- Sour cream
- Garlic powder
- Black pepper
- Salt
SWAPS
You can switch out the cheese and spices in this recipe. If you are not a fan of mushrooms, simply leave them out. This is a versatile recipe! You could also use turkey breakfast sausage for a lighter version.
🍽️HOW TO MAKE
This is a very simple recipe and since it’s crustless it takes nothing to put together. We love having a quiche in the fridge for a easy breakfast!
COOKING STEPS
Step 1
Cook sausage on top of the stove and drain. In a large bowl toss sausage with chopped spinach, onions, mushrooms and 1/2 cup of cheese.
Step 2
Spray a baking dish with cooking oil and add sausage mixture. I used a 10 inch pie plate to make this. In the same bowl you used to toss sausage and spinach whisk together the eggs, milk, sour cream, garlic powder, black pepper and salt.
Step 3
Pour this over the sausage mixture in the baking dish. Sprinkle on the other 1/2 cup shredded cheese. Bake in preheated 400 degree oven for 40 to 45 minutes until center is set and top is browned.

⭐TIP
This quiche will puff up in the oven and once removed and cool will fall some. That is nothing to worry about!

We love love love the sausage quiche. I made it last week for my husband and I and we both enjoy it so much. I have to say that I add green bell peppers and a combination of chedder cheese and mozzarella cheese or jack cheese. GREAT RECIPE.
I wish you people would put the nutritional information on your recipes. It looks delicious but want or can touch it without knowing the sodium content.
There are many apps online you can use to get that information. Feel free to put the recipe in one.
I plan on making this on Saturday morning for a breakfast on the deck. Can I substitute chopped frozen spinach for the fresh??
I think you could easily do that, I would defrost it first and make sure to get as must moisture out as possible.
I make this so much and only use fresh spinach – never frozen and never cooked. Just chopped up the fresh spinach and put it in it.

Can you assemble this the night before and bake in the morning?
I have never tried it but so no reason why you couldnt.
Question – my husband doesn’t like sour cream. Yes, I know, but I married him anyway. If I leave out the sour cream, do I substitute something else? Another egg or some heavy whipping cream?
YOu could probably leave out the sour cream and use a full cup of milk. You can’t taste the sour cream 😉
My son doesn’t like sour cream either and can always taste it. I’m going to try this using ricotta. Been looking for a good crustless recipe for awhile!! Thank you!

Can it be frozen?
Probably, but I have never tried freezing it.
This was absolutely delicious. I chopped the spinach very fine , and only use 2 1/2 cups. I omitted the mushrooms so I didn’t freak my husband out. Are used green onion tops. I would definitely make this again. Even my husband who despises anything green had a second helping. So easy to make for a brunch when you have a crowd coming.

This was absolutely great. Substituted heavy cream for the milk for the low carb diet we are on. We have not bought milk since October. haha
I did the same! Plus I added 1/4 C parmesan to the filling! Next time I will add a few red pepper flakes to the mix.
