Ham Cheese Tomato Quiche - The Southern Lady Cooks

 

This  Ham, Cheese and Tomato Quiche is good for breakfast, brunch, lunch or dinner. It is super easy to make and reheats well too.  The spices and fresh tomato really give it a great flavor.  It could also be made with sausage.  This easy recipe will become a favorite with your family. If you love quiche definitely give this one a try!

Ham, Cheese and Tomato Quiche

Pie crust, uncooked (This is a Pillsbury frozen pie crust)

All-purpose flour

Carnation evaporated milk

Eggs

Shredded cheddar cheese

Medium sized tomato

Onion

Ham

Thyme

Dried parsley

Salt

Pepper

Nutmeg

We love to top this quiche with sour cream! It adds a delicious flavor to it. Quiches are a wonderful addition to any meal and are super versatile. We also enjoy crustless quiches! Ingredients
  

  • 1 9 inch pie crust, uncooked (This is a Pillsbury frozen pie crust)
  • 2 tablespoons all-purpose flour
  • 1 cup Carnation evaporated milk
  • 3 eggs
  • 1/2 cup shredded cheddar cheese
  • 1 fresh medium sized tomato chopped
  • 1/4 cup onion chopped
  • 1 cup ham cooked and chopped
  • 1/8 teaspoon thyme
  • 1/4 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon nutmeg

Instructions
 

  • Pierce unbaked pie shell several times with a fork.
  • Add ham, tomato, cheese, and onion to pie shell.
  • Whisk together flour, eggs, milk, salt, pepper and spices until smooth as you can get it. Pour over ingredients in pie shell. Bake in preheated 375 degree oven for 50 to 55 minutes.

      I have not tried freezing quiche, Sorry. I don’t know how the crust would stand up to freeing but it may work ok for you.

  4. Eliminate the ham and double the tomatoes and you have another good Southern version of Tomato Pie.5 stars

  5. Looks and sounds delish! I would love to make this, but I live alone and that would be too much for me. Would it freeze well do you think? then I could eat it over a period of time.

      Hi Mary, I have not tried freezing this quiche but feel like it would freeze ok. If you have a small iron skillet or round baking dish, you could try making it like a single sized pan pizza and cut the ingredients in half. You could make your own crust for a single one. Hope this helps.
