This soup is easy to make, loaded with flavor and perfect on a cool night. It’s hearty and delicious and actually super versatile. You can switch up the sausage, use turkey smoked sausage, hot Andouille sausage or beef kielbasa. We used russet potatoes but you can use yellow potatoes if you like. It’s so simple, add everything to the crock pot and before you know it, you have a wonderful dinner. We suggest adding cornbread muffins!

Swaps and Additions

Like stated above, you can easily switch up the sausage to any you prefer. You can also switch up the spices; we made this more Cajun style, but you don’t have to, and if you don’t like onion or green pepper, leave them out. We like the cream cheese in this and use full-fat, but low-fat would be fine too. We use heavy cream because it adds great flavor. We love it with cheddar cheese but you can switch it up if you want.

Crock Pot Sausage Potato Soup

Ingredients
 

  • 1 lb of Andouille Smoked Sausage or just regular smoked sausage cut into pieces
  • 6 or 7 medium to large potatoes peeled and cut into chunks
  • ¼ cup of green pepper chopped
  • ½ cup of celery chopped
  • 1 small onion chopped
  • 4 cups chicken broth
  • 2 teaspoons minced garlic
  • 1 teaspoon of cajun seasoning
  • ½ teaspoon of smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 8 ounces cream cheese
  • 1.5 cups heavy cream

Instructions
 

  • Add chopped potatoes, andouille sausage, onions, chicken broth, minced garlic, celery, green pepper, cajun seasoning, smoked paprika, salt and pepper to the crock pot.
  • Cook on high for 4 hours or low for 6-8 or until potatoes are soft.
  • When the potatoes are done, add the cream cheese, cheddar cheese and heavy cream.
  • With a potato masher, you can blend the soup, leaving some small chunks. This is when you will make the soup the way you like it, chunky or more soupy.
