CROCK POT COWBOY CASSEROLE

Crock pot cowboy casserole is a delicious comfort food dish your family will love. Crock pot cowboy casserole

There are many different ways to prepare this casserole and you can use your favorite ingredients in the recipe.  This is the way my family likes this crock pot cowboy casserole and the way I make it.  Some recipes call for a can of cream of mushroom soup or a creamed soup but I add the diced tomatoes with green chilies instead of the creamed soup to mine.  The dish is delicious served with my recipe for Southern cornmeal hoecakes shown in the photo above.  You can keep this casserole in the fridge for several days and it is good warmed over.

Crock pot cowboy casserole will become an easy favorite to make for your family.

1 pound ground beef

1 cup chopped onion

1/2 cup chopped green, red or yellow sweet pepper

3 to 4 red potatoes, unpeeled and cut in bit-sized pieces

1 1/2 cups corn, frozen or fresh

1 (14.5 ounce) can kidney beans, drained

1 (10 ounce) can diced tomatoes with green chilies, do not drain

1 (14.5 ounce) can diced tomatoes, do not drain

1/2 teaspoon black pepper

1/2 teaspoon salt

2 teaspoons minced garlic

1/2 teaspoon chili powder

1 teaspoon Worcestershire sauce

Pinch cayenne or few drops hot sauce

1/2 cup water or beef or chicken broth

1/2 to 1 cup shredded cheese (I use Taco blend but you can use whatever you like)

Brown ground beef, onions and peppers in a skillet on top of the stove, drain.  Place the potatoes in the bottom of a 3 1/2 quart crock pot and sprinkle corn on top.  Add the browned hamburger with onions and peppers on top of the corn along with the kidney beans.  In a bowl combine both cans of diced tomatoes along with the 1/2 cup water or broth.  Stir in the black pepper, salt, garlic, chili powder, Worcestershire sauce and cayenne or hot sauce.  Mix well and pour over the contents of the crock pot.  Cook on high for 4 hours or low for six hours or until potatoes are done. Once the casserole is finished cooking, sprinkle on shredded cheese, put the top on the crock pot and let it melt.  Makes about 8 servings.   Enjoy!

Tips on Kidney Beans:  Kidney beans are a great source of protein, fiber, vitamins and minerals.  They are effective in stabilizing blood sugar levels and some studies show that eating kidney beans at least 4 times a week will help in weight loss. The fiber in kidney beans helps with colon health.  Kidney beans should always be well cooked since they are toxic when raw.

  1. R u suppose to stir it all up once in the crockpot or wait till cooked

    1. The Southern Lady says:

You want the potatoes on the bottom so they are closest to the heat and will cook faster. So I let it cook, then you can stir it up once the potatoes have had enough time to cook.

I used black beans but other than that I followed the recipe exactly and mine also came out soupy. Everyone still loved it, but yes I would also call it a stew instead of a casserole.

  7. Dena Boggs says:

Im not a very good cook but I made the crockpot cowboy casserole last night. It was easy and delicious. I followed the directions and recipe exactly, I thought. It turned out to be really soupy. I must have done something wrong. It was good and will be added to my personal recipes for me to make again later but I’ll call it crockpot cowboy stew. Can you suggest a way to lessen the liquid? Maybe I should drain the tomatoes.

    1. The Southern Lady says:

You could delete the broth or drain the tomatoes either one, Dena.

  8. Pat Williams says:

The Cowboy Casserole was a hit with the menfolk. I didn’t have kidney beans, only a can of cannelllini beans, but they worked. It will be a good winter menu item, too5 stars

  9. If you wanted to make this in the oven what temperature would you set the oven to and for how long? I am looking forward to trying this one. I love all of your recipes.

    1. The Southern Lady says:

Thank you, Ginger. I am delighted you love our recipes and happy to have you on the site. I have not made this in the oven but I would brown the ground beef, onions and peppers and add to casserole along with other ingredients. Cover and cook on 375 until potatoes are done, maybe 30 to 45 minutes. I hope this helps and you enjoy the casserole. Have a great weekend.

  10. Sue Erskine says:

That does look hearty and good for cooler weather, which is exactly what we have here in Australia. Will definitely have to make…
I must tell you, I made your Honey muffins.. They were a big big hit and very yummy.. I used self raising flour and put chopped pecans in the muffins rather than on, sprinkled cinnamon and sugar on top.. Not big changes, but we liked them.. Love your recipes… Thank you

    1. The Southern Lady says:

Those muffins sound delicious. We loved the cowboy casserole, I hope your family enjoys it 🙂
