If you are a fan of easy crock pot dishes, you will want to try our Chicken and Noodles. It’s so easy and only a few ingredients and has fantastic reviews.

❤️WHY WE LOVE THIS RECIPE

This chicken and stuffing is made in the crock pot and wonderful for any meal.  Just add cranberry sauce and a couple vegetables and you have Thanksgiving anytime!  My family loves this meal and could eat it every day.  This recipe will keep for several days refrigerated and can be reheated in the oven or microwave.  You can double the recipe if you want to make a lot.  It makes a great weeknight dinner on a busy day.

SWAPS

We make this with a cornbread stuffing mix but you can use any kind you like. We love cornbread dressing it is our favorite. Our homemade dressing is one of our most popular recipes on this website, but we use a box stuffing for this easy recipe. We make this with Cream of Chicken but you can use cream of celery or cream of mushroom.

OVEN VERSION

 You could make this in the oven, too.  Just cover all ingredients in a casserole dish and bake at 350 degrees for 1 hour or until chicken is done.

ADDITIONS

Some recipes call for green beans or other vegetables to the mix. We love to serve this with cranberry sauce. It’s one of our favorites, and it reminds us of Thanksgiving.  Optional ingredients you can add to this recipe are a teaspoon of poultry seasoning, chopped celery and onion.  I did not add salt since the broth and stuffing mix already contain salt, but you can add more if desired.

Ingredients
 

  • 1 pound chicken tenders can use 3 or 4 chicken breasts or any parts of the chicken
  • 1/4 teaspoon black pepper
  • 1 6 ounce box cornbread stuffing mix You can use any stuffing mix
  • 1 14.5 ounce can chicken broth
  • 1 10.5 ounce can cream of chicken soup undiluted

Instructions
 

  • Sprinkle pepper on chicken and put chicken in the bottom of a 3 quart crock pot. Combine stuffing mix with the chicken broth and cream of chicken soup. Spread over the chicken in the crock pot.
  • Cook on low for 5 to 6 hours or high for 4 hours or until chicken is done. Remove and shred chicken. Serve with stuffing. Makes about six servings.

Notes

    Snow here in northern Ohio derailed the plans I’d made for Monday. In a quick “just in case” pre-snow shop on Sunday, I picked up some chicken tenders and a box of the Stovetop stuffing (had to make do with the chicken flavor as they didn’t have the cornbread variety.) I decided to go ahead and make this yesterday as it felt like a crockpot kind of day with the snow coming down steadily! I added some poultry seasoning per your suggestion, and it turned out great! I’m planning to make sure I have the ingredients on hand prior to Thanksgiving, along with some cranberry sauce, in the event the weather gods act up again and I’m not able to make the trip across town to spend the holiday with my cousin and and his niece as planned! (Assuming the roads are clear, your easy 3-ingredient cranberry salad will be making the trip with me, as well as at least one of your dips to enjoy as a pre-dinner snack!)     So so good!!! Ultimate comfort food! I have found that using a stuffing mix with large croutons the stuffing holds up better and not prone to get too mushy. I adore StoveTop stuffing and it is my preferred brand, but in this particular recipe the brand that has larger croutons does hold up a little better.5 stars

  4. Can you use already cooked chicken like rotessiere chicken?

    1. I think you could, you wouldn’t need to cook it very long since the chicken would be cooked.

      Wonderful recipe. I made it and added your suggestion of adding some poultry seasoning and I also added a little butter (I bake my turkey all night with butter in oven on low) we usually have tons of broth for dressing. This recipe is so close to our thanksgiving food. We had cranberry sauce and sweet potato casserole the kids loved it. Thanks for your crock pot section I used it daily till summer break.5 stars
