Old Fashioned Raisin Pie

This old-fashioned raisin pie will become a favorite.  Lots of plump, juicy raisins make this a tasty dessert served with ice cream.  You might also like our recipe for impossible pie.

Old fashioned raisin pie is wonderful for any holiday.

3 cups raisins
1 cup water
1/2 cup sugar
2 tablespoons all-purpose flour
3/4 cup evaporated milk
2 tablespoons butter or margarine
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 teaspoon vanilla extract
1 tablespoon Barcardi rum (Optional) (Can use more)
2 (9 inch) pie crusts                                                                                
 
Combine raisins and water and simmer on top of stove for 10 minutes over low heat.  In another pan mix sugar, flour, milk, butter, and salt.  Cook over medium heat stirring constantly until thick.  Remove flour mixture and combine with raisins.  Stir in vanilla and rum.  Pour into pie shell. Cut the other pie shell in strips and make lattice design.  Crimp edges. Bake in preheated 350 degree oven for 40 minutes.  Enjoy!
