PEANUT MARSHMALLOW BARS
These Peanut Marshmallow Bars are a delicious treat loaded with peanuts and marshmallows. A sweet and salty dessert everyone will love! Plus it’s made with a cake mix!

Why You’ll Love These Peanut Marshmallow Bars
This found a variation of this recipe in a cookbook and decided to give it a try. It’s one we all liked, they are gooey and the topping is delicious. Make sure you don’t overbake the cake part, or it will taste a little dry. We all agreed the topping is so good and the whole peanuts instead of peanut butter was a great treat!
Salted or Unsalted Butter
We use unsalted butter in this recipe but I don’t think it will be bad with salted. We figured the salted peanuts would just lessen the saltiness.
What are Peanut Butter Chips?
Peanut Butter Chips are just like chocolate chips but made with peanut butter. You will find them in the same location in the grocery store.

Tip
Don’t overbake the cake.. you want the cake part to be soft. The edge pieces on ours got a little overbaked, and the center, where it was still soft, was wonderful, so be sure not to overbake the cake portion. Remember once you remove it, you will be putting the marshmallows on and back in the oven for another 3 minutes.

Peanut Marshmallow Bars
Ingredients
- 1 15.25 ounce package yellow cake mix
- 2 tablespoons water
- 1/3 cup unsalted butter softened
- 1 egg
- 4 cups miniature marshmallows
- Topping:
- 1 10 ounce package peanut butter chips
- 2/3 cup of light corn syrup
- 1/4 cup or 4 tablespoons unsalted butter
- 2 teaspoons vanilla extract
- 2 cups Rice Krispie cereal
- 2 cups salted dry roasted peanuts
Instructions
- Beat together the cake mix, water, butter and egg with a mixer.
- Spray or grease a 9 x 13 baking pan and spread mixture in the bottom. I just use my hands to spread it because it is thick.
- Bake in a preheated 350 degree oven for 16- 18 minutes or until center tests done. Remove from oven and spread marshmallows evenly over the top. Put back into the oven for 3 minutes.
- Remove and set aside. Make the topping below.
- Topping Instructions:
- Combine the peanut butter chips, corn syrup and butter in a pot and melt on medium heat on top of the stove stirring until smooth.
- Remove from heat and stir in vanilla, cereal and peanuts. Stir to combine and spread over marshmallow. Cool and cut into squares.
- Makes about 2 dozen depending on size you cut them. Enjoy!
