Peanut Marshmallow Bars

These Peanut Marshmallow Bars are a delicious treat loaded with peanuts and marshmallows with a cake bottom.

Ingredients

  • 1 15.25 ounce package yellow cake mix
  • 2 tablespoons water
  • 1/3 cup unsalted butter softened
  • 1 egg
  • 4 cups miniature marshmallows
  • Topping:
  • 1 10 ounce package peanut butter chips
  • 2/3 cup of light corn syrup
  • 1/4 cup or 4 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 2 cups Rice Krispie cereal
  • 2 cups salted dry roasted peanuts

Instructions

  • Beat together the cake mix, water, butter and egg with a mixer.
  • Spray or grease a 9 x 13 baking pan and spread mixture in the bottom. I just use my hands to spread it because it is thick.
  • Bake in a preheated 350 degree oven for 16- 18 minutes or until center tests done. Remove from oven and spread marshmallows evenly over the top. Put back into the oven for 3 minutes.
  • Remove and set aside. Make the topping below.
  • Topping Instructions:
  • Combine the peanut butter chips, corn syrup and butter in a pot and melt on medium heat on top of the stove stirring until smooth.
  • Remove from heat and stir in vanilla, cereal and peanuts. Stir to combine and spread over marshmallow. Cool and cut into squares.
  • Makes about 2 dozen depending on size you cut them. Enjoy!

Notes

Don't overbake the cake.. you want the cake part to be soft. The edge pieces on ours got a little over baked and the center where it was still soft, was wonderful so be sure and don't overbake the cake portion. Remember once you remove it, you will be putting the marshmallows on and back in the oven for another 3 minutes.
