When summer arrives and fresh peaches show up at the farmer’s markets this is one of the first desserts that we prepare. It’s full of flavor and is perfect for any potluck or gathering. Pound cakes are so easy to make and are absolutely delicious. This peach pecan pound cake is wonderful with whipped cream or ice cream.

Peach Pecan Pound Cake

1 cup of butter, softened

2 cups of sugar

6 eggs

1 teaspoon of vanilla

1 teaspoon of cinnamon

3 cups of all-purpose flour

1/4 teaspoon of baking soda

1/2 cups of sour cream

2 1/2-3 cups of diced fresh peaches

1/2 cup of chopped pecans

Confectioners sugar

Preheat oven to 350. Grease and flour a 10 inch bundt pan.  In a mixing bowl cream butter and sugar until fluffy. Add eggs one at a time and mix well. Continue mixing while adding flour, baking soda, cinnamon, vanilla extract and sour cream. Fold in peaches and pecans. Bake for 60-70 minutes or until test done. Cool for 10 minutes before removing from pan. Dust with confectioners sugar and serve with whipped cream or ice cream.

Ingredients
