Peach Pecan Pound Cake

This Peach Pecan Pound Cake is one of our summer favorites. It's delicious with fresh peaches and served with ice cream. This cake has a wonderful texture.

Ingredients

  • 1 cup of butter softened
  • 2 cups of sugar
  • 6 eggs
  • 1 teaspoon of vanilla
  • 1 teaspoon of cinnamon
  • 3 cups of all-purpose flour
  • 1/4 teaspoon of baking soda
  • 1/2 cups of sour cream
  • 2 1/2-3 cups of diced fresh peaches
  • 1/2 cup of chopped pecans
  • Confectioners sugar

Instructions

  • Preheat oven to 350. Grease and flour a 10 inch bundt pan.
  • In a mixing bowl cream butter and sugar until fluffy. Add eggs one at a time and mix well. Continue mixing while adding flour, baking soda, cinnamon, vanilla extract and sour cream. Fold in peaches and pecans.
  • Bake for 60-70 minutes or until test done. Cool for 10 minutes before removing from pan. Dust with confectioners sugar and serve with whipped cream or ice cream.

Notes

All ovens vary, cook the cake until it test done in the center.
