HOW WE COOK CORNED BEEF

You can use any cooked corned beef in this recipe, and we make ours a few different ways. We have a crock pot version, which is easy and delicious, and we also have a slow-cooked oven version. In this particular recipe, we used the oven-baked version, as we had just made it, and it worked fantastic.

We love how versatile this recipe is, because it’s a hash and you can add so many great things to it! Top this delicious hash with fried eggs, add in green peppers and onions, use a variety of different potatoes, mix up your spices to you liking. This is a versatile dish and one we love to make with leftover corned beef!

REHEAT AND FREEZING

This dish reheats well and will keep in the refrigerator for 3-4 days in an airtight container. You can also freeze this and it will keep for around 3 months.

💡SHORT CUTS & TIPS

If you don’t want to make a corned beef brisket you can use canned corned beef. You will need 2 cans for this recipe. You could also use frozen diced potatoes from the store. Each of these hacks will make this recipe quicker but the homemade version is delicious!

Ingredients
 

  • 3 cups chopped cooked corn beef
  • 3 to 4 large potatoes peeled and cubed
  • 5 tablespoons cooking oil I used olive oil
  • 1 medium onion peeled and chopped
  • 3 cloves of garlic peeled and diced or 3 teaspoons minced garlic
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika I used smoked paprika
  • salt to taste
  • Parsley for garnish fresh or dried

Instructions
 

  • Heat oil in a skillet and cook potatoes and chopped onion for 20 to 25 minutes or until potatoes are soft.
  • Add cooked corned beef. Sprinkle on pepper, salt and paprika. Cook on low for 15 more minutes. Can garnish with parsley before serving.
  • Makes 6 to 8 servings.

Notes

Could add a teaspoon of Worcestershire sauce. Chopped cabbage could also be added.
Delicious with fried eggs on top for breakfast.

  1. Have made similar for years. The key is consistent cuts of the potatoes and corned beef. Make sure especially the potatoes are small uniform cuts. Can’t wait to make again this year with leftovers!!5 stars
