Corned Beef and Cabbage - The Southern Lady Cooks

This recipe for corned beef and cabbage made in the crock pot is easy and good.  I did use a five quart crock pot.  You can use a smaller one and do about half the cabbage and vegetables. Corned beef and cabbage is delicious and makes a great meal for family and guests. You might also like our recipe for Irish soda bread.

Corned Beef and Cabbage Ingredients Needed:

3 to 4 pound corned beef brisket

Carrots

Potatoes

Onion

4 bay leaves

Minced garlic

Chicken broth

Beer (If you don’t want to use alcohol, you could use near beer or just add extra chicken broth)

Butter

Water

Seasoning packet that comes with brisket

Black pepper

As you can see this is a really simple recipe but it is absolutely delicious. Super easy to make and one of our favorites. It reheats well and great to enjoy for a few days. Add cornbread muffins for a real treat!

Also someone commented you could use gingerale in place of the beer. I have not tried it but I bet it works just fine!

Crock Pot Corned Beef and Cabbage

This is a delicious recipe for corned beef and cabbage. It's made in the crock pot which makes it super easy.

Ingredients
  

  • 3 to 4 pound corned beef brisket
  • 5 carrots
  • 5 potatoes cut in chunks (I used regular potatoes and peeled them. You can use red potatoes or regular and leave the peelings on as well)
  • 1 medium head cabbage cut in wedges
  • 1 medium onion peeled and cut up
  • 4 bay leaves
  • 1 teaspoon minced garlic
  • 1 14.5 ounce can chicken broth
  • 1 12 ounce can beer (If you don’t want to use alcohol, you could use near beer or just add extra chicken broth)
  • 2 tablespoons butter or margarine melted
  • 1/2 cup water
  • Seasoning packet that comes with brisket
  • 1/2 teaspoon black pepper

Instructions
 

  • Put brisket in the bottom of the slow cooker and add potatoes, carrots, onion and cabbage on top. Mix together remaining ingredients and pour over brisket and vegetables. Cook on low 7 or 8 hours or high about 5 hours. This makes a five quart crock pot about 3/4 full. Serve with spicy mustard or horseradish.

  3. I made corned beef and cabbage (not in the crockpot) last week when my grandson’s were here. I was putting it on the platter and the youngest grandson said, “Grandma, where’s the corn?” I told him there was no corn in it. He said, “You said we were having corn, beef and cabbage and you didn’t say anything about carrots, yuck!” LOL

  4. My husband is a recovering alcoholic and I hesitate to put alcohol of any kind in a dish…if I omitted the beer, would it drastically change the outcome of the dish???

      You could use non-alcoholic beer or leave it out. I think either way would work.

  9. This is a lot like I do mine, except in place of broth/beer/water I use gingerale, enough to cover the ingredients. Oh and I leave my onion whole & stud it with cloves. “Cause I don’t like onion and it’s easy to fish it out if it’s whole.

  10. Just finished corned beef and cabbage supper, complete with whole baby carrots, nice fresh whole onions and red potatoes, skin on and the most beautiful perfect head of cabbage. We always have seeded caraway rye bread and sweet butter.When cleaning up, I looked into the stew pot and thought, hmmm … cabbage soup.. Lots of tasty liquid and some veggie leftovers will make a base for soup after I add a few more veggies and “whatever”.

      Happy St. Patrick’s Day to you & your family Conor. My fathers family was from Ireland, he has passed but my sister & I spent two weeks in your wonderful country three years ago. We stayed at The Conrad in Dublin. The Irish people are so warm & friendly, I love St. Stephens Green! We had a wonderful time & hope to return soon. My front porch is decorated for St. Patrick’s Day & we will be eating corned beef & cabbage!
