Blueberry Coffee Cake - The Southern Lady Cooks

This Blueberry Coffee Cake is a simple recipe that is great to enjoy with family and friends! This cake comes together very quickly and taste great. We love that it’s made in an 9X9 so it’s a small cake and great for a small gathering or brunch.

Blueberry Coffee Cake Ingredients Needed:

All Purpose Flour

White Granulated Sugar

Baking Powder

Baking Soda





Vanilla Extract

Blueberry Pie Filling

As you can see this is made with very simple ingredients and most you will have on hand. Super versatile as you could easily use cherry pie filling too. The crumble topping really adds a great texture and we topped it with whipped cream and loved it. It’s good with or without the whipped cream and delicious with coffee.

Simple substitutions or additions:

  • Can use cherry pie filling
  • Can use almond or lemon extract instead of vanilla
  • Could use evaporated milk in place of the milk
  • Could add nuts of choice to the batter
  • Could add cinnamon to the topping

Blueberry cake ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup white granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 8 tablespoons butter or 1 stick or 1/2 cup melted
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 20 ounce can blueberry pie filling

Crumble Topping Ingredients:

  • 1/2 cup all-purpose flour
  • 2 tablespoons butter melted


  • Whisk together the flour, sugar, baking powder and baking soda plus nutmeg
  • Stir in melted butter, milk, egg and vanilla extract.
  • Spray a 9 x 9 baking dish with cooking spray and spread the flour mixture in bottom of the dish evenly.
  • Spread the blueberry pie filling over the flour mixture.

Crumble Topping Instructions:

  • Mix together until mixture looks like coarse crumbs. Sprinkle on top of blueberry pie filling.
  • Bake in preheated 350 degree oven for 55 to 60 minutes until crumb topping is brown and bubbly.
