3 INGREDIENT COCONUT MACAROONS

These 3 ingredient coconut macaroons are quick, easy and delicious.  We love 3 ingredient coconut macaroons because they are so versatile and you add so many different toppings or just leave them plain.  Make these 3 ingredient coconut macaroons on holidays, give them as a gift, or have them as a snack.   They are so easy to mix up and prepare and bake.  Make these 3 ingredient coconut macaroons  when you are craving something sweet for a tasty treat.  I love them with sweet tea!  Add toppings of almonds, maraschino cherries, chocolate chips or whatever you like to change them up a bit.

Coconut Macaroons:

 

1 (14 ounce) package sweetened coconut flakes or 5 1/3 cups

2 teaspoons vanilla extract

1 (14 ounce) can sweetened condensed milk ( I use my recipe for how to make your own sweetened condensed milk)

Combine coconut flakes, vanilla extract and condensed milk in a large bowl.  Line a baking sheet with parchment paper.  Use either an ice cream scoop or your hands to make these into balls and flatten on cookie sheet.  I squeeze them into balls with my hands and then flatten on sheet.  This makes them hold together.  Bake in preheated 350 degree oven for 10 to 12 minutes or until edges are browned.  Remove from baking sheet immediately when you take them out of the oven and let cool.  Makes about 2 1/2 dozen macaroons. Enjoy!
