This is a great salad to serve anytime.  My family loves it in the summer and winter.  I have been making this recipe for years and it has always been a favorite. I took it to functions at work and never brought any home..

1 head raw cauliflower
1 head iceberg lettuce
1 onion
1/4 cup grated Parmesan cheese
1/2 cup bacon bits or could use real bacon
1 pint mayonnaise, more or less
Cut lettuce, cauliflower and onion into small pieces. Add Parmesan cheese, bacon bits and mayonnaise.  Mix all ingredients in a large bowl. (Has a better flavor if mixed a few hours before served and kept refrigerated.)


Note:  Could add broccoli to this salad, too.

This recipe will serve 8 people easily and keeps well for several days. Enjoy!

  4. I have made this recipe for years! I layer all ingredients in order leave over night in refrigerator and mix just before serving. I prefer 1 pint of Hellmann’s Mayonnaise as well as a pound of bacon (crumbled up into pieces) and 3/4 cup of sugar, 1/3 cup parmesan cheese. Excellent for family gatherings and picnics. If you do not like mayonnaise miracle whip would be fine as well.

  5. I have a similar recipe and it also has cashews in it. Extra yummy! However, the salad does not keep very well in the following days because the cashews do get soggy.

  7. For sure going to try this one with vidala onion and peas. I will reduce mayo by 1/3 and substitute yogurt. Yum thank you.

  10. I wish my husband liked cauliflower ..he said it doesnt have a taste..what does he know ?

    • I don’t like cauliflower either but my great aunt made me taste it and now it’s my favorite go to salad for family get togethers , she made it, with 1/2 a head cauliflower, real bacon, and she layered it, and mixed right before serving. She entered this recipe in the local new paper, and took an Honorable Mention, for it. Thank you for sharing this recipe, wonderful seeing it published, again. Lorretta Lawson

  12. I have made a recipe similar to this for years. But, I substitute frozen peas for the lettuce. That way if there are leftovers it is good the next day. Sometimes the lettuce gets icky.
