ZUCCHINI BROWNIES

❤️WHY WE LOVE THIS RECIPE
Every summer we find ourselves with an abundance of zucchini so we make all of our favorite recipes. These brownies are one of our favorites and you would honestly never know they have zucchini in them. They are loaded with lots of chocolate and are great with a big scoop of vanilla ice cream on the side.
SWAPS
We make these with semi-sweet chocolate chips; you could use dark chocolate if you prefer. If you are not a fan of nuts, you can simply leave them out. We have not made these with Greek yogurt in place of the sour cream, but I do think that would work. We chose not to put a frosting on these brownies but you can if you like.

Sour Cream Zucchini Brownies
Ingredients
- 2 cups all-purpose flour
- 3/4 cup 100% pure cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/3 cups white granulated sugar
- 3 cups shredded zucchini
- 1 cup sour cream
- 8 tablespoons butter or 1/2 cup melted
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cup chocolate chips I used semi-sweet
- 1/2 to 1 cup chopped walnuts or pecans
Instructions
- In a large mixing bowl whisk together the flour, cocoa, baking soda, salt and sugar. Add shredded zucchini, sour cream, butter, eggs, vanilla extract and mix well with a spoon.
- Fold in chocolate chips and nuts.
- Spray a 9 x 13 baking dish with cooking spray. Add your brownie mixture. Bake in preheated 350 degree oven for 35 to 40 minutes. Ovens vary so check to make sure they are done.

Can’t wait to try! Do you think I could use fat free plain Greek yogurt in place of sour cream?
It would probably work, but using fat free will change the fat content of the recipe.
I followed the recipe with no changes. it is absolutely delicious . Moist and thick. Just love them. This will recipe will be a keeper for sure!!

Can I use cream cheese instead of sour cream?
I have never tried it with cream cheese, Billie. Therefore, I cannot advise you. Sorry.
Can you use yellow squash?
I have not tried it but I would think you could, Carol.
This may seem like a silly question but do you peel the zucchini first ?
No, you don’t peel it Judith.
Do you squeeze the moisture from the zuchinni before mixing?
Yes, if your zucchini is wet I would squeeze the moisture out, Diane.
I made these delicious brownies, very moist and great chocolate flavor.Great way too use zucchini.
