All ovens vary, so you should always check the cake about 10 minutes before it’s set to be done and see how it’s baking. People comment that it only took 35 minutes, so it’s best to always check.

Ingredients
 

  • 1 stick butter or 1/2 cup or 8 tablespoons softened
  • 1 cup white granulated sugar
  • 3 eggs
  • 1 cup sour cream
  • 3 very ripe bananas mashed
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup nuts pecans or walnuts (optional)

Instructions
 

  • Cream butter, sugar and eggs with mixer. Add sour cream, banana and vanilla extract and continue mixing. Whisk together flour, baking soda, baking powder, salt and cinnamon then add to creamed mixture and mix well.
  • Fold in nuts and mix with spoon. Spray a bundt pan with cooking spray and add batter to pan. Bake in preheated 350 degree oven for 45 to 50 minutes. Makes one bundt cake. Sprinkle with powdered sugar, add a glaze or frost with your favorite icing.

Notes

You could also make this in a 9 x 13 pan but check after 35 or 40 minutes to see if done.

  2. This is a great recipe. Nice and moist with lots of banana flavor. Instead of adding nuts, I added chocolate chips. I think next time, just to change it up, I’ll try adding 1/4 cup cocoa powder and nuts. Thanks for another great recipe!5 stars

  8. I made the banana and nuts cake and hope it comes out really good. I did not put as much sugar as you asked, I am diabetic and put about 3/4 organic sugar hoping that it will not put so much calories and makes it sweet cause the bananas are sweet as it is. I put walnut instead of pecan. I had made a
    cake with pecan and I usually give half or sugar and her family really liked it. I licked my finger when I transfered the cake in the form and it tasted good. I think it will a successful one. I will be using the icing sugar and put some walnuts like inside the cake. I love baking and I am sure it will come out delicious.

  9. This banana bundt cake was delicious! I followed the recipe except for substituting greek yogurt for the sour cream and I had some maraschino cherries to use up, so I threw them in, along with the crushed walnuts. The cake was not too sweet and very flavourful. The texture was perfect. It was moist but still fluffy. It won’t last long around here. Thanks for the recipe.

  10. I was hoping for another slice but came home to find that my dog had eaten both Bundt cakes off the cutting board as they cooled (I split the recipe into two 3 cup Bundt pans….could have made 3 but I filled the pans quite full).5 stars

    I made two cakes for our family reunion . They are in the oven now, I added two teaspoons of banana extract in addition to the vanilla extract . Added a sliced banana and gently mixed it in before adding batter to bundt pan. Going to put a camel glaze on top! Can’t wait to serve them! I’m sure they will be wonderful.     I made this, but I love cranberries so I added a cup of cranberries and only 2 bananas and King Arthur gluten free flour and it was superb!!!
