SKILLET CREAMED CORN
This easy skillet creamed corn is delicious!
This dish is just a few ingredients and so good. My family can never get enough when I serve it. It makes the perfect side dish for any weeknight dinner, gathering or holiday. You can easily double this recipe if you’re cooking for a group. We like it with cheddar cheese but you can add any cheese you like.
Skillet Creamed Corn
4 cups of corn (can be fresh or frozen but needs to be thawed)
3-4 strips of bacon
1/2 cup of half and half cream
1/4 cup of chicken broth
1 cup of shredded cheddar cheese
Cook bacon in skillet then remove and set aside. Turn heat down and add corn, half and half and chicken broth. Simmer for 8-10 minutes until it thickens, stirring occasionally. Chop bacon. Add bacon and cheese to the corn and stir until cheese is melted. Serves 6-8
