PROOF INSTRUCTIONS

This bread does have to rise 2 times and does take some time. This is not a quick bread, it is a yeast bread. We set our bread in the oven with the light on to let it rise. You can also cover and set it on top of your oven or in a warm place where you feel it will rise.

MAKES TWO LOAVES

This recipe makes two loaves which is perfect for any gathering or just to give one to a neighbor, take to church, etc. I have not tried cutting the recipe in half.

Cook Time 30 minutes
Course bread
Cuisine American, Amish
Servings 2 loaves

Ingredients

  • 1/2 cup warm water
  • 1 package active dry yeast 1 package contains 1/4 ounce of yeast or 2 1/4 teaspoons
  • 1/3 cup white granulated sugar
  • 2 more cups water
  • 1 1/4 teaspoons salt
  • 2 tablespoons shortening I use Crisco
  • 5 to 7 cups all-purpose flour

Instructions

  • Dissolve the yeast in the 1/2 cup warm water and set aside. In a pan on top of the stove heat the other 2 cups water, sugar, salt and shortening just until warm and sugar is dissolved and shortening is melted. Do not boil.
  • In a large mixing bowl add 4 cups flour and pour in the water with the salt and shortening. Mix with a spoon. Then add the dissolved yeast and water to the flour. Add the other 3 cups flour a little at a time mixing with a spoon until the dough comes together and you can make it into a ball. Spread some flour on a cutting board or counter top and knead the dough several times.
  • Grease a large bowl or crock (I use olive oil but you can use whatever oil you have). Put the dough in the crock and turn over once so both sides are greased. Put in a warm spot and let rise for 3 hours. (I put in my oven and turn the oven light on) Remove and punch the dough down with your fist. cut the dough in half.
  • Grease 2 (9 x 5) bread pans and spread the dough in the pans. Let rise another 1 1/2 hours. Bake in preheated 350 degree oven for 30 minutes. Makes 2 loaves.

  1. So easy and the texture reminded me of a fresh doughnut. I had to use bread flour since I did not have enough of the all purpose flour and I used 1/6 cup sugar and 1/6 cup honey. My loaves rose beautifully. Thank you for sharing.5 stars

  2. Bj Williams says:

YUM ! VERY GOOD! Instead of using 2 more cups of water, could I use milk?4 stars

    1. I think you probably could, but I have not tried it, so I wont say yes with 100% authority.

  3. This looks amazing. Can you use butter instead of shortening?

  4. I clicked on the recipe and have searched for ‘easy yogurt bread’ and this keeps popping up. Is there a recipe for yogurt bread??5 stars

  5. StephanieLH says:

I used the recipe and instead of 2 loaves I used half and made 16 dinner rolls. But it was slightly sweet but delicious. Fresh out of the oven with butter… yum. I made mine in a French door convection oven/ air fryer. The top came out very crusty. However, on the last, I brushed it with 2 tablespoons of burger and it softened up some so it wasn’t so crunchy it hurt my gums. To proof it in my little oven, I put it on keep warm for temp and oven setting and it was ready to go in about an hour. Thank you so much for sharing the recipe.5 stars

  6. I was wondering if you’re suppose to cover the dough while it rises? I didn’t see that in the instructions. Want sure if this particular recipe doesn’t call for our, or you left it out by accident. Thank you.5 stars

    1. The Southern Lady says:

It will probably work either way, I don’t cover it since I set it in the oven.

  14. This is a wonderful bread recipe and so easy to follow and make. I used your recipe for a 4H bread baking contest my 6 year old granddaughter entered. She had to complete every step by herself except taking it in and out of a hot oven. Each step had to be documented with photos of her completing them. She had so much fun making this bread, learned a lot and won 1st place. It was beautiful and tasted wonderful. Of course we gave credit to you for the recipe in her entry. Besides the bread, the best part was the memories her and I made together. Thankful5 stars

    1. The Southern Lady says:

Oh I just love this! Leigh and I were both in 4-H and loved it! So glad you enjoyed the bread and it worked so well!

  15. I keep my yeast packets in a zip-lock bag in the freezer; same with baking powder and baking sofa. They will keep until I use up; sometime over a year. I’ve never had dead yeast. However, I will always proof the yeast

  19. Patricia Gilmore says:

This is not about the bread. I glanced at your recipe books, and wondered if you’re working on a book for the instant pot?

Sorry, Patricia we don’t have one in the works at the moment.

    2. Could this bread be made in a bread making machine?

  24. When bread recipes call for all purpose flour can you use bread flour instead?

    1. The Southern Lady says:

You should be able to use either and the same amounts in recipes, Saundra. You may see some difference in texture.

  25. Gayle Smith says:

Mine didn’t rise. What did I do wrong? I did put it in a warm place.

    1. The Southern Lady says:

If 1 1/2 hours works for you, Donna, then do it for 1 1/2 hours. Just as long as it rises.
