Nothing says Southern like a biscuit. Fall is here and September is National Biscuit Month. Biscuits are a staple in any Southern home.  Walk in a Southern restaurant and chances are you will find biscuits on the menu.  Mention biscuits to a Southerner and images of biscuits and gravy, biscuits and chicken or biscuits and butter with homemade jam immediately come to mind.  Southern cooks are skilled at making biscuits and daughters are taught by their mothers and grandmothers before them.  Nothing says comfort food like the traditional Southern biscuit.   1. I love biscuits. And i play around with different ways to make them. Recently i have developed a biscuit that is so easy and uses very few ingredients. They are light and fluffy. I use my Kitchen Aid mixer to make them. I also use rings to make them perfectly round. To make them use 1/4 C. of self rising flour for every biscuit. Since it is just the wife & me, i just use 1/2 C. I add 1/2 t. baking powder,Now this is going to sound strange, i add 1/2 t. of Benefiber for some fiber. 1 T. lard (you can use whatever you like, butter, shortening, etc.). you may add 1/2 t. sugar if you like them a little sweet. Mix all very well, until it resembles corn meal. Then add 1 T. Mayonaise. Mix well again. Add 1/2 the amount of buttermilk as amount of flour. Mix well. The dough will be very wet. I do not roll it out, i just use a spatula that i have got wet then get both hands wet and scoop out1 /2 of the dough and form it in your hand and put into ring that has been sprayed with cooking spray, if using one. Or onto baking sheet. Bake at 450 Deg. for 12 minutes. I know this sounds a little confusing but it is simple as could be.

  4. My mother baked them on the old wood cook stove too until we moved to “town” . My husband loves biscuits.

  5. I so enjoy hot biscuits with Georgia produced sorghum syrup and real butter.
    Just too delicious !!!
