You can switch up the ground beef, for ground turkey or even ground chicken. You can also use black beans if you like. We love to mix up the cheese in this recipe and you can use whichever your family prefers. If your family doesn’t like onions or green peppers, simply leave them out.

Bisquick is a baking mix, and it’s usually found in the baking aisle of a grocery store. Super versatile and many people make pancakes with it. If you don’t have it you can simply make your own. Here is the recipe!

Impossible Chili Pie

This easy Impossible Chili Pie is a classic Bisquick recipe from the 1970s. Made with simple ingredients, it bakes into a hearty, comforting one-pan dinner the whole family will love.

Ingredients
 

  • 1 pound lean ground beef
  • 1/2 cup onion chopped
  • 1/2 cup green pepper chopped (Optional)
  • 1 15.5 ounce can chili beans, drained
  • 1 cup frozen corn
  • 1 4 ounce can green chilis, drained
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 teaspoon minced garlic
  • 1 teaspoon chili powder
  • Pinch cayenne or few drops hot sauce
  • 1/2 cup chunky salsa
  • 1 cup shredded cheese divided (I used cheddar and Monterey Jack. Can you whatever you like)
  • 3/4 cup bisquick
  • 3 eggs
  • 1 cup milk

Instructions
 

  • Green pepper rings for garnish, Optional Brown ground beef, onion and green pepper in a skillet on top of the stove. Drain and return to pan. Add drained chili beans, corn, green chilis, pepper, salt, garlic, chili powder, hot sauce and salsa.
  • Mix all ingredients together and heat for about 5 minutes. Spray a 10 inch pie plate or can use a 2 quart square baking dish. Pour ingredients into dish and sprinkle 1/2 cup of the shredded cheese on top. Whisk together the bisquick, eggs and milk. Pour over the cheese.
  • Add the remaining cheese and green pepper rings. Bake in preheated 400 degree oven for 25 to 30 minutes. Makes about 8 servings.

Notes

You could use a 9X9 baking dish too.

  1. I made this for dinner tonight and we loved it! I made it exactly as written, complete with sliced bell pepper rings. Not only is this a beautiful dish, it is very diabetic friendly for my husband, who has to watch his carb intake. Will definitely be part of our meal rotation.       Sorry, I have not tried making this in a slow cooker. I guess you could just add all the ingredients and cook for several hours.

      No, they are not the same thing but you could use kidney beans, too.

    Put them in a skillet with a little butter and green peppers and saute’ them until caramelized. We like them this way.

      It is not hot. You could leave out the hot sauce and cayenne and chili powder. Use mild salsa.
