CHOCOLATE ECLAIR CAKE

This Chocolate Eclair Cake is super simple to make and everyone loves it! No bake, and it comes together very quickly; the longest part is letting it chill in the fridge.

We love how simple this recipe is, only a few ingredients and it’s perfect for any spring/summer gathering. We add a homemade chocolate frosting which takes this dessert to the next level.

🍴KEY INGREDIENTS

  • Honey graham crackers (You can use chocolate graham crackers, too, and it will take almost the whole box of crackers)
  • French Vanilla Instant Pudding
  • Milk
  • Cool whip
  • Frosting:
  • Butter 
  • Cocoa
  • Milk
  • Vanilla extract
  • Powdered sugar
  • Pecans or walnuts (optional)

SWAPS

You can leave out the nuts and use just vanilla instant pudding. Without the French vanilla, it won’t taste as much like an eclair, but if you are in a pinch, it will work.

This no bake dessert is so simple! Get your ingredients organized and let’s make this great chocolate eclair cake!

COOKING STEPS

Step 1
Place a layer of graham crackers in the bottom of a 9 x 13 inch baking dish

Step 2
Mix the pudding with the milk and cool whip and spread half of it over the graham crackers. Place another layer of graham crackers over the pudding and the rest of the pudding over the second layer of crackers. Add one last layer of crackers on top. Then add frosting.

Step 3
Bring butter, cocoa and milk to a boil in a saucepan on top of the stove. Remove and stir in sugar, vanilla extract and nuts. Spread over cake.

Want to save some time? You an always buy a can of chocolate frosting at the grocery store, heat it in the microwave and pour it over the cake. It won’t be as good, because this homemade frosting is amazing… but it will work!

Ingredients
 

  • 1 14.4 ounce box honey graham crackers (You can use chocolate graham crackers, too, and it will take almost the whole box of crackers)
  • 2 3.4 ounce boxes French Vanilla Instant Pudding
  • 3 cups milk
  • 1 8 ounce container of cool whip

Frosting:

  • 1 stick butter or 8 tablespoons or 1/2 cup
  • 1/4 cup cocoa
  • 7 tablespoons milk
  • 1 teaspoon vanilla extract
  • 3 1/2 cups powdered sugar
  • 1 cup nut pieces pecans or walnuts (optional)

Instructions
 

  • Place a layer of graham crackers in the bottom of a 9 x 13 inch baking dish

Notes

This is better if you put it in the fridge for 24 hours before serving. You could cut the recipe in half and it keeps well for several days in the refrigerator. We love it with fresh strawberries.

    Sorry, I love this cake and make it all the time, but my recipe that I received is made with Keebler Club Crackers. The texture of the club crackers gives this more of an eclair flavor with the flakiness when the crackers soften. I also just us a can of chocolate frosting heated in the microwave for about 35-40 seconds depending on the wattage of you microwave.5 stars

    Great Recipe! I have also used Devil’s Food or Dark Chocolate Jello Pudding for the frosting. Just mix according to the “pie” directions.5 stars

  6. Love chocolate eclair cake. A time saving hack is to use a can of chocolate frosting (microwave 1 min.) and pour over layers instead of making it from scratch. Yummy!
