Apple Pie Muffins

❤️WHY WE LOVE THIS RECIPE

We love a good muffin, and these are great with the apple pie filling. Then you add the pecans and all the delicious spices, and you have a delightful treat! These muffins are super versatile and keep well in an airtight container. They make about 18 muffins!

SWAPS & ADDITIONS

These muffins could be made with any pie filling. You could also add raisins to the muffins and top these with a little brown sugar too. If you are not a fan of the spices, simply switch them up. You can use pecans, walnuts or no nuts at all. Top these with a basic powdered sugar glaze if you like. You can freeze these muffins.

  • I just made these…..

and they are delicious! I can see topping them with a crumb or streusel topping, and/or a simple glaze. I used Duncan Hines Wilderness Apple Pie filling, poured the filling in a bowl and cut the slices of apple into smaller pieces. I think cherry pie filling would be delicious, too. I really like the cinnamon in the muffin part. This is a recipe I will use regularly.

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Course bread, Breakfast
Cuisine American
Servings 6 servings

Ingredients

  • 1 21 ounce can apple pie filling (I use Duncan Hines Original Country Apple Pie Filling)
  • 2 cups all-purpose flour
  • 1/2 cup white granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 1/2 cups buttermilk
  • 3 tablespoons butter melted
  • 2 eggs
  • 1 cup nut pieces Optional

Instructions

  • In a large bowl whisk together the flour, sugar, salt, baking soda, baking powder, and cinnamon. Add the vanilla extract, buttermilk, melted butter and eggs. Mix well with a spoon.
  • Spray a 12 cup muffin tin, add about 1/4 cup batter to each cup. Drop about 1 tablespoon of the apple pie filling into the batter. Sprinkle nuts on top. Bake in a preheated 375 degree oven 25 to 30 minutes until brown on top.
  • This recipe makes around 18 muffins.

Notes

You can make these with about any kind of pie filling. They keep well and easily reheat in the microwave. I refrigerate any leftover. We love the filling “oozing” out of the muffins. You could add raisins along with the nuts and you could sprinkle a little brown sugar and cinnamon on top before baking.

I would love to try your Apple Pe Muffins, but I was inquiring if this Recipe can be doubled as when I bake I usually like it to be able to be doubled i.e. Sweet Breads, Cookies etc. We are Seniors and have 2 very bad knees. This way I can freeze them for later. I just recently joined your site.

I generally don’t review things that I haven’t made as directed. But I wanted to thank you for the idea of these muffins. I had a plane King Arthur flour gluten-free muffin mix and didn’t have blueberries and wondered what to do with them. I had a can of Splenda sweetened apple pie filling. Then I found your recipe. I use my muffin mix I added a packet of instant apple cinnamon oatmeal to give the batter more flavor and added some cinnamon. I filled my muffin tins and top them as directed and I cut up some pecans and sprinkled on top and sprinkled with some stevia brown sugar. I baked according to your directions as well. these might be my favorite muffins ever I kind of want to go out and buy more pie filling and test more flavors! thank you for the suggestion I’m sure your homemade version is wonderful I gave up baking homemade when I went gluten-free!5 stars
