❤️WHY WE LOVE THIS RECIPE
We love appetizers and snack ideas, and these definitely hit the spot. Made with pork sausage, which is one of our favorite foods, then you add in some hashbrowns, cream cheese, and a little Bisquick… so what is not to love?!?! I think these could be for breakfast too and are great to make in advance and just enjoy cold with a cup of coffee.

These sausage hashbrowns bites are versatile! You can easily switch up the cheese, we love cheddar but you could do a combination of any cheese your family prefers. You can also add in any spices you like. If you like “heat” make this with hot pork sausage. You could easily make these gluten free by using a gluten free bisquik.
ARE THEY CRISPY?
Yes, we cooked ours until they were a little crispy which is how we prefer them. You could also dip these in ranch dressing for a real treat.

Sausage Hashbrown Bites
Ingredients
- 1 lb of ground pork breakfast sausage
- 1 1/2 cups of Bisquick
- 8 ounces of cream cheese at room temperature
- 1 1/2 cups of shredded cheddar cheese
- 4 cups of frozen hashbrowns thawed
Instructions
- Preheat oven to 400 degrees.
- Spray a baking sheet with nonstick spray or use parchment paper.
- Combine all ingredients in a large bowl. Mix together well.
- Shape into 1-inch balls and place at least an inch apart on the baking sheet.
- Bake for 20-25 minutes or until they are cooked through and golden brown.
- Let them cool a bit before serving.

THESE SOUND REALLY GOOD!! I’M THINKING OF MAKING TO TAKE FOR EASTER BRUNCH. CAN I BAKE THE NIGHT BEFORE AND THEN WARM IN THE OVEN? HOW LONG TO WARM WOULD YOU SUGGEST?
You could make them the night before and I cant really say how long it would take to reheat them.
Should I make more than one recipes worth for a gathering of 40 people?
Absolutely. This probably makes about 35 hashbrown bites, so you would atleast want to double the recipe, then everyone will still only get around two.
Do i cook the sausage first?
No, you dont cook it first, it cooks in the oven once it is rolled into balls.
OK first, people this is the area to comment on what you think of the recipe AFTER you have made it. With that said I just finished making them and they are fantastic. The hashbrowns and the cream cheese keep the insides of the balls moist while the outsides can crisp up a bit, but still allowing the flavor of the sausage and cheddar cheese to come through. I followed the recipe to a tee and I couldn’t be more pleased with the flavor. I made mine a little crispy just like the pictures. I will be making these again and again. Thanks Anne for giving us this recipe. What a great appetizer for the holidays.

Hello! They look delish! The recipe says it makes 8 servings, so about how many sausage bites per serving do you estimate? Thank you!
I estimated about 4 per serving, it made between 28-32 sausage balls.
Do you mix by hand or use an electric mixer?
I just mix it with my hand.
Do you squeeze the hashbrowns dry?
No, they didn’t have a lot of water in them.
Can these be made like a casserole?
I don’t eat pork.. What can I substitute in its place?
Turkey sausage.. I have never made sausage balls, etc with anything other than pork but you can use turkey sausage.
We use deer sausage.
Can I make and freeze these?
I haven’t tried it, but see no reason why it wouldn’t work.
