CINNAMON ROLL POKE CAKE
Cinnamon roll poke cake is so easy to prepare and really does taste like a cinnamon roll.
Poke cakes are easy to put together and seem to always be a hit when I serve them. This cake is fabulous for any gathering or event. It’s a big hit for a brunch with a hot cup of coffee.
Cinnamon Roll Poke Cake
1 (15.25 ounce) white cake mix, plus ingredients to prepare the cake
Cake Filling Ingredients
1 (14 ounce) can of sweetened condensed milk
1/2 cup of brown sugar
4 tablespoons of melted butter
1 teaspoon of cinnamon
1 teaspoon of vanilla
Frosting ingredients
1/2 cup butter or margarine or 8 tablespoons or 1 stick, softened
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla extract
1 (16 ounce) box powdered sugar or about 3 1/2 cups
1 cup of chopped pecans
Bake cake according to directions on the cake box. Let cake cool for 10 minutes and then using the handle of a wooden spoon (or something similar in size) poke holes in cake one inch apart. Mix cake filling ingredients and gently pour over cake. Let cake cool completely and then frost with cream cheese frosting.
Frosting Directions:
Beat together butter and cheese with mixer. Add vanilla extract and powdered sugar and continue mixing until frosting is smooth and of spreading consistency. Spread on cake and top with chopped pecans.
