Fresh Peach Cobbler TSLC

I love peaches. I love to make cobblers, cakes, and pies with them. Peach cobbler is always a favorite at my house and with my family.

5 cups fresh peaches, peeled and sliced
2 tablespoons cornstarch
3/4 cup brown sugar
1/2 cup water
2 tablespoons butter or margarine
2 tablespoons lemon juice
Mix together cornstarch, brown sugar, water, butter and lemon juice.  Add peaches.  Cook in a saucepan on top of the stove until thickened.  Pour into a round 2 quart baking dish that has been sprayed with cooking spray.  Drop batter by spoonfuls over peaches and kind of spread out as much as possible.  Can sprinkle batter with sugar.
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sugar
3 tablespoons butter or margarine, melted
1 egg
5 tablespoons milk
Beat till smooth with whisk.  Drop by spoonfulls over peaches and spread evenly.  Bake in preheated 400 degree oven for 35 to 40 minutes.

  1. I make this with canned peaches all the time. Just add 1 tablespoons of corn starch to peach liquid. I also add a little cinnamon and nutmeg to peaches. Taste great.

  12. This is just too funny, Katherine made peach cobblers recently and didn’t see many great biscuit topped recipes. She could’ve used this. Yes, hers were fine, just dandy in fact. She was torn between doing the peaches on the stove first or not and decided not to. I bet she might do it this way next time to compare. Great recipe Southern Lady!
