UNSTUFFED PEPPER SKILLET
This unstuffed pepper skillet is so easy to make and one of our favorites. If you love stuffed green peppers this is the dish for you!

❤️WHY WE LOVE THIS RECIPE
We love how easy this recipe is to make. You can use precooked rice if you to save on some time. This dish reheats well and it has a great flavor. Great for a busy week as you can enjoy this for a few nights in a row.
🍴KEY INGREDIENTS
- Italian Sausage
- White onion
- Green peppers
- Italian Style diced tomatoes
- Beef broth
- White rice, uncooked – see notes
- Garlic
- Italian seasoning
- Black pepper
SWAPS
You can easily switch up the meat, use ground beef or ground turkey. If you don’t have beef broth you can use chicken broth.
🍽️HOW TO MAKE
This dish is really easy to make and of our favorites!

Step 1
In large skillet, brown sausage, onion and garlic over medium heat for about 4-6 minutes. Next add in peppers, Italian seasoning and pepper. You may have to drain the fat off of the meat you use, I did’t have to with this sausage.
Step 2
Cook until peppers are beginning to soften, then add both cans of diced tomatoes and beef broth, mix well and bring to a boil. Once the mixture is boiling add in your uncooked rice and continue to boil for another minute or two, then turn down heat, cover and let simmer for 30-35 minutes.
Step 3
I did stir this a few times to ensure the rice was mixed in well with the juices and cooking. Also you will have to check to make sure your rice is cooked, times may vary. Top with cheese if you desire.
Notes:
To make this process easier use precooked rice, you will need 2 cups of cooked rice. I would bring mixture to a boil, let simmer for 25 minutes then add the precooked rice. You could also make rice on the side and serve this dish over rice. Either way it will still be delicious!

This makes about 8 servings and reheats well. Just store in a Tupperware container in the fridge.

This was an easy to prepare delicious one dish meal. I invited a friend over to share lunch with us, and she asked for the recipe. I used pre-cooked rice for convenience, subbed a can of regular Ro-tel tomatoes with green chilis for one of the cans of diced tomatoes, and reduced the bell peppers to one cup due to my own digestive issues. I added a half pound of browned ground beef just to reduce the intensity of the Italian sausage and get another serving from it. It was even better reheated the next day though all the liquid had been absorbed by the rice. The flavors seemed more intense. I may try it again with riced cauliflower. I think it would be good with cubed chayote squash as well.
Made this kept version and used riced cauliflower. SO GOOD!
I made this and loved it. Added Worcestershire sauce and smoked paprika since I used low fat turkey breakfast sausage and brown Ready Rice. Also added beef Herb Ox since I eliminated the beef broth and cook without salt. Froze half of it since I cook for 1. Planning to make this again. Can’t taste as well after having Covid but this really hit the spot. Thank you.

If I cook the rice and then add to the recipe how do I adjust the recipe. Do I need to cut down or omit the broth?
I would leave the broth out.
I fixed this tonight and it was so good. I did add some spinach and extra garlic. Drizzled olive oil on top when it was plated. Very easy for a weekday meal.
I made this recipe for dinner tonight and the hubby and I loved it. I did substitute ground beef for the sausage which I had on hand. I followed the rest of the recipe to the letter. I added shredded cheddar cheese on the top which made it extra delish. I served with a side salad and sour dough bread. Will definitely make this again!!

I made this and my family loved it. I used one pack of hot and mild sausage. It gave it a zesty flavor. I also cooked the rice separate and it worked out perfectly when I mixed it in the meat and sauce. I will be making this again!

I was searching for a recipe with Green Peppers in it as I had some from my garden. I made this for my dad and he LOVED IT!! Thank you so much for a delicious, easy recipe. I ended up making this with Ground Turkey and I don’t think it made a difference at all. I loved that the ingredients were simple and straigh forward. Thank you!

Do you think it would work if I cut everything by 1/2. Wasn’t sure how long to cook it either. There’s just two of us and it would make too much.
I have not tried cutting it in half but feel like it would be fine to do so, Debbie. I would just cook the same amount of time and keep an eye on it. Should be o.k.

That’s almost what I fill my stuffed peppers with. I use wild rice instead of white. And ground sirloin for the sausage.
