We love this bacon ranch chopped salad because it’s so versatile. It’s loaded with all kinds of delicious vegetables, but if you don’t like any of them, you can leave them out. Plus, the creamy dressing really makes this salad. You can easily make it a day in advance, and it’s still wonderful!

  • Cauliflower
  • Red Onion
  • Green Bell Pepper
  • Red Sweet Bell Pepper
  • Carrots
  • Corn
  • Bacon
  • Colby Jack Cheese
  • Mayonnaise
  • Sour Cream
  • Dry Ranch Mix

🍽️HOW TO MAKE

The hardest thing about this salad is cutting up the veggies! Once you cut everything up, it comes together very quickly!

COOKING STEPS

Step 1
Chop up all vegetables to your desired size. Mix dressing ingredients in a separate bowl. Mix together and toss well.

I have made this a few times. The first time, I used Duke’s Mayonnaise and the second time, I used Avocado Oil Mayonnaise, and both times, it was delicious.

Ingredients
 

  • 3-4 cups of broccoli florets finely chopped
  • 3-4 cups of cauliflower finely chopped
  • 1/2 cup of red onion diced
  • 1/2 cup of green bell pepper diced
  • 1/2 cup of red sweet pepper diced
  • 1/2 cup of carrots finely sliced and diced
  • 1/2 cup of sweet corn I used canned
  • 10 slices of bacon cooked, drained and chopped
  • 1 cup of colby jack cheese shredded
  • Dressing:
  • 1/2 cup of mayonnaise see notes
  • 1/2 cup of sour cream
  • 2.5 tablespoons of dry Ranch Mix

Instructions
 

  • Combine all salad ingredients together in a large bowl. In a separate bowl combine dressing ingredients. Pour over salad and toss well.

  4. I’ve made this SEVERAL times now. I USUSALLY don’t mix the “wet” stuff in until I know who’s having it for dinner,(3 people or 6). Since I have stomach issues, I even eat this for breakfast! What I LOVE is you can use ANYTHING & EVERYTHING you like! I make a LOT of your recipes & don’t always comment but KNOW this when your ears are burning, I AM TALKING about you!       Has anyone tried this with slightly cooked broccoli and cauliflower?5 stars

      1. I always blanch broccoli and drain well before using it in a salad. It becomes very green and releases nutrients which raw broccoli doesn’t provide. I haven’t tried it with cauliflower.
