THREE BEAN SALAD

Three Bean SaladThis three bean salad is a great dish to take to potlucks and you can make it ahead of time. It also keeps well for several days in the refrigerator.  It is so easy to make and goes with just about any main dish you have for a meal.  This recipe could easily be doubled if making for a gathering or large crowd.  It is wonderful for a buffet table or any holiday meal, too. Three bean salad is a wonderful salad to have on hand anytime of the year.

1 (14.25 ounce) can French style green beans, drained

1 (14.5 ounce) can wax beans, drained

1 (15 ounce) can kidney beans, drained

1/2 cup green pepper, chopped

1/2 cup onion, chopped

1/2 cup celery, chopped

1/2 cup apple cider vinegar

1/2 cup sugar

1/4 cup salad oil

1/2 teaspoon salt

1/8 teaspoon pepper

3 teaspoons Dijon mustard

Combine beans, green pepper, onion, salt, pepper and celery in a large bowl.  Beat vinegar, sugar, oil and mustard with a whisk.  Pour over salad and chill for several hours or overnight.  Makes about 8 servings.  Enjoy!

(Note:  I have added fresh chopped tomatoes to this salad right before serving)

Ingredients
