Why You’ll Love This Green Beans, Sausage and Potatoes
This dish is super easy to make, which is one of the reasons why we love it. If you are using fresh garden green beans, then you are in for a real treat. I believe that is the best way to make these but sometimes you don’t have them on hand. Canned green beans work just as well and it’s the low slow cooking that takes these beans to the next level. I feel that you must make Fried Cornbread or Cornbread Muffins to go with this hearty dish.
Swaps
You can use andouille sausage for more spice or turkey sausage for less fat and more protein. You can also leave the sausage out and enjoy the beans made without it. This is one of our most popular recipes and it’s just Green Beans and Potatoes.
If you don’t have beef broth you can always use chicken broth. I have even made it with just water in the past, so this is a very versatile recipe.
As far as the onion in this recipe, if you don’t like onion, you can leave it out. Also, play with any of the spices to your liking.
If you are using fresh garden beans, be sure to wash them, remove strings as best you can, and snap them. If you are using canned or frozen, you won’t need to do anything.
Can I Make This On The Stove Top?
Yes, you can make this on top of the stove, bring it to a boil, then turn it down to a simmer and cook until the potatoes and the beans are done. If you want to cook the beans way down like country green beans, then add the smoked sausage about 30 minutes before the cooking process is done.

Sausage, Green Beans and Potatoes
Ingredients
- 1 pound smoked sausage can use Polish sausage, turkey sausage, Andouille sausage, cut into slices
- 4 cups frozen green beans or fresh green beans or 2 15 ounce cans
- 1 14.5 ounce can beef broth
- 2 cups water
- 3 to 4 large potatoes peeled or unpeeled and cut up (can use russet or red potatoes)
- 1 large onion peeled and cut in rings
- 1 teaspoon minced garlic
- 1/2 teaspoon salt or to taste
- 1/2 teaspoon black pepper
- 2 teaspoons bacon drippings Optional
Instructions
- Combine all ingredients and place in 3 quart crock pot or a pan on top of the stove.
- Cook in crock pot on low for 5 to 6 hours or high for 4 hours or until the potatoes are done.
- If making on stove cook until potatoes are done about 45 minutes to an hour. Makes 6 to 8 servings.

This is one of my favorite meals to make! My great grandma made it for us when we would visit them and it has always been my go to on days that I can’t decide what to make or if im not feeling well!

I made this tonight as written. Comfort food at its best- it was delicious! I made it on the stove. Since I don’t cook for 3 or 4, I will use fewer potatoes. I cooked it on the stove. I cooked covered for part of the time and then uncovered for about 20 minutes.
I have been eating this meal for longer than I can remember! I also brown the sausage and onions before putting them in the crock pot. I have never used beef broth – I use chicken broth! The only other ingredient I add is a whole stick of butter on top of everything before putting the lid on. I just started doing that a few years ago – and holy cow. YUM.
I made this using a broth cooked for 24 hours in my crockpot with a ham bone, celery, garlic, peppercorns, onion and sweet potato. Strained and then added red potatoes quartered with skins, fresh French green beans, kielbasa sausage and beef smoked sausage cooked in bacon drippings, and some quartered baby portobello mushrooms also sautéed in the drippings before adding. Per other comments, I added some brown sugar and brought it all home with skillet cornbread. This might be the best thing we’ve ever eaten! I feel like a true southern lady

Can I use canned potatoes?
Sure.
Is there a substitute for beef broth? I do not have any at home and do not want to go buy if I don’t have to.
You can easily use chicken broth or vegetable broth.
Keep beef, bullion, cubes and chicken bullion, cubes in your cabinet. You mix those with hot water whenever you need to use a cube. Easy to store I don’t use anything else.

Can you make this with fresh polish sausage
Yes, you may want to cook it first or cook it long enough in the crockpot so that it cooks the meat.
I make this year around, it’s one of our favorites! I do use andouille sausage, Cajun seasoning, butter and Yukon gold baby potatoes with skins on and canned green beans not drained! Corn bread muffins on the side are a must!
When using canned, store bought green beans, do you drain the juice or not?
You can if you like.. but you don’t have to.
I made it with Slap Ya Mama Cajun seasoning and it was so good!!! I loved the added spice.
When cooking on stovetop, do you put lid on pot or not?
I never cover mine.

I grew up with this and I’ve never seen it posted as a real recipe. We always assumed it was Mom’s “dump everything in a pot” creation for when she didn’t have much time to make dinner. Thank you for sharing!!
I grew up with this (just made it tonight). I always thought it was something my mom threw together with her using sausage instead of ham.. we named it after our Mother. So we say we are making “Dolly Soup”. I never knew there was a recipe for this.
My mother made it with cut-up chubs of bologna… and I’ve been talking to my husband about it for years–and he made fun of the idea mercilessly. Tonight, nearly 21 years into our marriage, I made it using high quality hot dogs–assuming it was as close as I was going to get to what I remember. My fresh green beans had a single teeny tiny pepper in the bag–which my kids selected at the store. On a whim, I cut up half of that pepper and threw it in without the seeds. It added a lovely amount of heat.
My family who figured it would be gross–but, everyone loved it. We dubbed it “Poor Man’s Boil… “

I had never heard of this combination, but my husband grew up with it. The first recipe I found was okay but bland. I tried yours, and it’s SO good and flavorful. Now we have a recipe that we both can love! Thank you. Pre-sauteeing the sausage was good, and add the bacon grease.
Love th I s recipe I use it with turnips due to diabetes and potatoes spiking my blood sugar. So good either way though especially in the fall in front of a nice fire in the fireplace.
