POPPY SEED BREAD

Poppy Seed Bread - CopyThis recipe for Poppy Seed Bread is so good and goes great with coffee.  Your friends and family will definitely enjoy this served for brunch or just anytime you want a treat.

Bread Recipe:

2 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup white sugar

1 cup butter or 16 tablespoons or 2 sticks, softened

3 eggs

3/4 cup buttermilk

1/4 cup sour cream

1/2 teaspoon lemon extract

1/2 cup lemon juice

2 tablespoons poppy seeds

Whisk together the flour, baking powder, baking soda and salt.  Set aside.  Cream sugar, butter and eggs with mixer.  Add buttermilk, sour cream, lemon extract and lemon juice and continue mixing.  Pour in flour mixture and mix well.  Fold in poppy seeds.  Spray a 9 x 5 bread pan with cooking spray.  Bake in preheated 350 degree oven for 35 to 40 minutes. Makes 1 loaf. Serve as is or with glaze below.

Glaze for Poppy Seed Bread:

1 cup powdered sugar

3 or 4 tablespoons milk

1 teaspoon lemon or vanilla extract

Mix together with spoon and drizzle over bread once it is cooled.
