❤️WHY WE LOVE THIS RECIPE

This recipe has only a few ingredients and comes together in about 30 minutes. These bars are also great for a small gathering. They are made in an 8X8 and are a great treat when you want a little something sweet. We love to top these with powdered sugar but you don’t have to if you are not a fan. They are delicious, the top forms a crust and the center is soft!

SWAPS

We received a comment below about using 2 cups of fresh pineapple and they came out great. So you can switch that out if you like. You can also use sweetened or unsweetened coconut.

⭐TIP

It’s important to really drain the pineapple, I like to put it in a strainer/colander and then use a fork to press out any liquid. The less liquid, the better they cook, so try your best to get as much liquid out as you can.

  1. Our family threw a little birthday get together very quickly. I needed something easy that used a few dishes and ingredients. I had everything on hand here and barely had to search to find this recipe. It came out really nice and it isn’t overly sweet tasting. Plus, this recipe was so easy to make that it seems hard to mess up. It’s a perfect summer treat. Thank you for sharing.5 stars

  2. These are delicious and light! I added a 1/4 tsp of coconut extract and 1/2 tsp of vanilla extract. I also added a pinch of salt. I used gluten free flour and really drained the pineapple like you described. Perfect! Thanks for a great recipe! – They were really delicious after a meal of your yummy pineapple chicken done in the crockpot! 🙂5 stars

  3. ROBERT DAIL says:

Dumb question, but what type of flour? self rising?

    1. Not dumb at all.. it should say “all purpose flour”. I have corrected it.

  4. can you use crushed pineapple instead of tidbits? that is all i have now.

    1. I think that would work just fine, but you do want to try to get as much liquid out of the pineapple as possible.

  5. Mark Siffer says:

Yum! I used fresh pineapple. A 20 ounce can of pineapple yields about 2 cups. I had plenty of pineapple so I made a double batch. I will surely make these again! Thank you for sharing this fine recipe.5 stars
