PIMENTO CHEESE TOMATO PIE
My family loves this pimento cheese tomato pie.
Tomato pies are huge in my family. They are so simple to prepare and deliver so much flavor. Our pimento cheese tomato pie takes it to another level. In the summertime, I love to use our fresh garden tomatoes to make this recipe. I’ve served this special dish for breakfast, brunch, lunch, and dinner. It always receives compliments. I’ve handed this recipe out numerous times.
Ingredients Needed for Pimento Cheese Tomato Pie:
1 9 inch pie crust
Medium tomatoes, sliced
Shredded sharp cheddar cheese
Mayonnaise
Diced pimentos
Fresh basil
Fresh parsley
Oregano
Smoked paprika
Salt and pepper, to taste
Recipe Notes: If you don’t have fresh basil and parsley you can always use dried herbs. Just cut the amount in half. If you like this recipe you may want to also try our traditional Southern tomato pie. It has fantastic reviews.

Pimento Cheese Tomato Pie
Ingredients
- 1 9 inch pie crust
- 3 medium tomatoes sliced
- 1 1/2 cups of shredded sharp cheddar cheese
- 1/2 cup of mayonnaise
- 3 tablespoons of diced pimentos
- 1 teaspoon of fresh chopped basil
- 1 teaspoon of fresh chopped parsley
- 1 teaspoon of oregano
- 1/4 teaspoon of smoked paprika
- salt and pepper
Instructions
- Lay sliced tomatoes on a baking pan for 10 minutes to let them dry out a bit. Dab with a paper towel to remove any excess juice.
- Cook empty pie crust on 400 for 10 minutes. Be sure and poke holes in the bottom of the pie shell.
- Mix mayonnaise, cheese, pimentos and smoked paprika together. Add a layer of tomatoes in the bottom of the pie shell. Mix basil, oregano, parsley, salt and pepper together. Sprinkle some of the seasoning mixture over tomatoes. Spread a layer of pimento cheese mixture over tomatoes. Continue layering until ingredients are gone. Bake on 350 for 35-45 minutes until done.
