Lay sliced tomatoes on a baking pan for 10 minutes to let them dry out a bit. Dab with a paper towel to remove any excess juice.
Cook empty pie crust on 400 for 10 minutes. Be sure and poke holes in the bottom of the pie shell.
Mix mayonnaise, cheese, pimentos and smoked paprika together. Add a layer of tomatoes in the bottom of the pie shell. Mix basil, oregano, parsley, salt and pepper together. Sprinkle some of the seasoning mixture over tomatoes. Spread a layer of pimento cheese mixture over tomatoes. Continue layering until ingredients are gone. Bake on 350 for 35-45 minutes until done.
