Honey pear muffins are one of our favorites.  My family likes these muffins for breakfast with coffee, as a treat with milk or anytime they are available to grab.  We don’t like any frosting or any kind of drizzle on these muffins and I don’t even add spices when I make them.  We think they are that good and can stand alone as far as taste.  Of course, you can add some spice if you like or top them with frosting or whatever appeals to your family.  You might also like to check out our recipe for fresh pear cake.

Honey pear muffins will quickly become a favorite.

2 cups grated fresh peeled pears or finely diced.  (About 3 large pears)

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup butter or 4 tablespoons, softened

2 eggs

3/4 cup brown sugar

1/4 cup vegetable oil

1/4 cup honey

1 teaspoon vanilla extract

1/2 cup sour cream

1/2 cup milk or buttermilk

1/2 cup chopped walnuts or pecans

Whisk together the flour, baking powder, baking soda and salt in a large mixing bowl.  Cream butter, eggs and sugar with a mixer in another bowl. Add vegetable oil, honey, vanilla extract, sour cream and milk and continue mixing.  Combine the flour mixture and the egg mixture.  Mix with mixer.  Fold in pears and nuts with a spoon or you can just sprinkle nuts on top of the batter in muffin tins.  Spray a 12 cup muffin tin with cooking spray.  Fill muffins cups 3/4 full of batter.  Bake in preheated 400 degree oven for 20 minutes until a toothpick inserted in centers comes out clean.  Makes 1 1/2 dozen muffins.  Enjoy!
