Ingredients

  • 2 cups grated fresh peeled pears or finely diced about 3 large pears
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup butter or 4 tablespoons softened
  • 2 eggs
  • 3/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup milk or buttermilk
  • 1/2 cup chopped walnuts or pecans

Instructions

  • Whisk together the flour, baking powder, baking soda and salt in a large mixing bowl. Cream butter, eggs and sugar with a mixer in another bowl. Add vegetable oil, honey, vanilla extract, sour cream and milk and continue mixing. Combine the flour mixture and the egg mixture. Mix with mixer.
  • Fold in pears and nuts with a spoon or you can just sprinkle nuts on top of the batter in muffin tins. Spray a 12 cup muffin tin with cooking spray. Fill muffins cups 3/4 full of batter. Bake in preheated 400 degree oven for 20 minutes until a toothpick inserted in centers comes out clean.
