❤️WHY WE LOVE THIS RECIPE
We love how moist this cake is, and you can’t taste the mayonnaise. Many people will comment that they are not fans of mayonnaise. If you look at the ingredients of mayonnaise, which are oil and eggs, you will see this is just a shortcut that replaces those two. This is a great cake to make if you don’t have eggs. You can add frosting or just sprinkle a little powdered sugar on it.
SWAPS AND SUGGESTIONS
This cake has been around a very long time and we have had some great suggestions on swaps and additions. Some people add chocolate chips, a ganache frosting, and one person replaced the 1 cup of water with 1 cup of coffee and said it was amazing. We always recommended reading the comments on our recipes, we have some amazing cooks that follow our page and we love their suggestions. One person suggested using a peanut butter frosting and we love that idea! You can use the frosting from this recipe and add it to this cake.

⭐TIP
If your cake comes out dry, you may have over-mixed it or over-baked it. I always suggest checking the cake 10 minutes before the time is up. All ovens vary and so the cooking time may be less or more. You can also make this cake in a 9X13 but you will have to shorten the cooking time.

Chocolate Mayonnaise Cake
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 cup sugar
- 1/2 cup 100% pure cocoa
- 1 1/2 teaspoons vanilla extract
- 1 cup water
- 1 1/4 cups mayonnaise You can use lowfat
- 1/2 to 1 cup nuts of your choice Optional
Cream cheese frosting:
- 1 8 oz. pkg. cream cheese, softened
- 1 stick margarine or butter softened
- 1 box confectionary sugar 16 oz
- 1 tsp. vanilla
Instructions
- Whisk together flour, baking soda, sugar, and cocoa. In another bowl whisk together the vanilla extract, water, and mayonnaise until it looks like milk. Pour mayonnaise mixture into flour mixture and mix well with a spoon. (Could use mixer, too). Fold in nuts. Pour into a well-sprayed bundt pan.
- Bake in preheated 350 degree oven for 40-45 minutes checking for doneness. (You can make this in a 9 x 13 pan but cut the cooking time to 30 to 35 minutes.) Let cool about 10 to 12 minutes before removing from pan. (You could also add chocolate chips to this cake). Frost with your favorite icing or sprinkle with powdered sugar. This cake is good with cream cheese frosting recipe below, too. Great with ice cream or whipped cream as well.
Cream Cheese Frosting Instructions
- Whip all frosting ingredients together with mixer until smooth and of spreading consistency

Do you think that this will be ok if I use avocado mayonnaise?
I think that may work, I can’t guarantee it but I don’t see why it wouldn’t.
So good! I make homemade mayo so just one egg , 1 cup of oil and a dash of salt and 1/8 t if vinegar in place of the mayo works too! We have added chocolate chips to cake, raspberry to the middle layer frosting, ganache on top, etc. It’s our foundation for our birthday cakes. I will be referencing your link when I repost it!

Question is it possible to make it in a 9×13 pan. I made a mayonnaise cake a long time ago and did it in a 9×13. I don’t have a Bundt pan
I have never tried it but see no reason why it wouldnt work. You will have to adjust the time, it will cook faster in a 9X13, so just check it.

My husband and I own a small town bar and grille. With that being said I make almost everything homemade including my desserts. I made this cake last week for my dessert, it was a hit. I got my highest compliment ever from this cake, one of my customers who is a chocoholic so I knew this would be right up his alley ordered it for him and his wife. I served it sliced on its side, heated a little bit and with whipped cream. He said in all of my 78 years that is the best cake I have ever put in my mouth. This is now part of my dessert rotation for my bar. I did make a chocolate ganache to drizzle on top after it cooled. Amazing!

This is an AMAZING recipe that works so well. Now, that I have your attention, replace the 1 cup of water with 8oz of your favorite coffee. I use a dark roast K-Cup and it makes all the difference in the world. Trust me on this one.
Made this today, excellent cake. Cake was dense and moist. Used Kraft Southern style mayo. Made 6 small, individual decorative bundt cakes. Would definitely make again!

My sister made mayonnaise cake for years and everyone loved it. She passed away a couple years ago and everyone in the family has tried to duplicate and cannot come close, even with her recipe. They come out more dry, not as dark and not as porous. What are we doing wrong?
Try cooking 5 to 10 minutes less time than the recipe calls for testing the center to make sue it is done. Hope this helps.
