CAJUN OVEN ROASTED POTATOES

Roasted potatoes always make a great side dish at any meal and these Cajun potatoes are wonderful.

Serve these Cajun oven roasted potatoes with beef or chicken. My family loves any kind of potato! These potatoes would also be good at any breakfast meal or buffet and they are so easy to prepare.  My family can’t get enough of these and I sometimes double the recipe if I am having several guests.

Ingredients for Cajun oven roasted potatoes.

6 to 8 potatoes, peeled and cut into chunks

1/4 cup of olive oil

1 tablespoon Cajun seasoning (use mine)

2 teaspoons dried thyme or oregano

1 teaspoon salt

1/2 teaspoon black pepper

Whisk together the oil, Cajun seasoning, thyme or oregano, salt and black pepper in a bowl. Toss the potatoes in the oil and spread on a baking sheet. Bake in preheated 375 degree oven for 50 minutes or until done in centers turning several times. Makes 4-6 servings. Enjoy!
