CABBAGE APPLE AND SAUSAGE SOUP
Cabbage apple and sausage soup makes a quick meal anytime and is good served with cornbread, grilled cheese or just toasted bread.
We love having this cabbage, apple and sausage soup for lunch. Cabbage, apple, sausage soup is comfort food your family will enjoy and keeps well for several days refrigerated. The recipe could be doubled. I have not tried freezing this soup. You might also like our recipe for Ritzy Cabbage Casserole.
Ingredients for cabbage apple and sausage soup:
4 tablespoons butter
4 cups shredded cabbage
1 cup chopped green onions (could us regular onions)
1 cup chopped green pepper
1 teaspoon caraway seeds
2 (14.5 ounce) cans chicken broth
2 large apples with peeling left on or about 2 cups cored and chopped (I used red delicious)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 pound smoked sausage, cut in pieces
Melt butter in soup pot. Add cabbage, onions, green pepper and caraway seeds. Cook several minutes until vegetables are tender. Pour in chicken broth and add apples, salt, pepper and broth along with smoked sausage. Simmer about 20 minutes. Makes 6 to 8 servings. Enjoy!
Note: You can also add a cup of celery to this soup. You can make this cabbage, apple and sausage soup healthy by using fat-free chicken broth and turkey sausage.
