Cabbage Apple and Sausage Soup
This Cabbage Apple and Sausage Soup combines great flavors to make this a delicious soup.
Servings: 8 servings
Ingredients
- 4 tablespoons butter
- 4 cups shredded cabbage
- 1 cup chopped green onions could us regular onions
- 1 cup chopped green pepper
- 1 teaspoon caraway seeds
- 2 14.5 ounce cans chicken broth
- 2 large apples with peeling left on or about 2 cups cored and chopped I used red delicious
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 pound smoked sausage cut in pieces
Instructions
- Melt butter in soup pot. Add cabbage, onions, green pepper and caraway seeds. Cook several minutes until vegetables are tender. Pour in chicken broth and add apples, salt, pepper and broth along with smoked sausage. Simmer about 20 minutes. Makes 6 to 8 servings.
Notes
You can also add a cup of celery to this soup. You can make this cabbage, apple and sausage soup healthy by using fat-free chicken broth and turkey sausage.
